OSIE'S "OLD-FASHIONED" BANANA PUDDING
This recipe is from my mil, she was such a wonderfully patient lady (especially to let me measure everything for this recipe as she made it!) and is sadly missed. It is the "old-fashioned" way to make banana pudding and does take a while, but the family seems to like it. :) prep & cook time are guesses

Steps:
- Combine (to make custard) sugar, flour, corn starch, and salt in a pot.
- Stir in milk.
- Heat over low heat, stirring often to avoid scorching, until thickened.
- (beleive me, you will know when this happens!-seems like it takes"forever") Beat egg yolks and gradually stir into the hot sugar mixture.
- Cook 5 minutes, stirring constantly.
- Remove from heat and stir in vanilla.
- "Line"a 2 quart casserole dish with a layer of wafers and top with half of the sliced bananas.
- (**Iusually have this step finished before I begin to make the custard.**) Pour half of"custard" over bananas.
- Repeat, ending with custard on top.
- In separate bowl, beat egg whites stiff, but not dry.
- (I use the electric mixer on high.) Gradually add 1/4 c sugar and beat until mixture forms stiff peaks.
- Pile on top of pudding.
- Spread it around to the edges of the dish to"seal" it.
- (Then make the top pretty by making designs with the back of the spoon.) Bake in a preheated 425 degree oven for about 5 minutes.
- (until the egg whites start to turn a golden brown) Watch this close, because sometimes mine turns black-really fast!
- Serve warm or chilled.

I found this on a store-brand pudding box and modified it to make it diabetic friendly. Tastes so rich and good!

- Mix pudding and milk in a medium bowl.
- Stir 1 1/2 minutes with a wire whisk.
- Gently fold 1 cup of Cool Whip Free into pudding mixture.
- Fold in banana slices.
- Top with remaining Cool Whip Free.
- Cover and chill at least 30 minutes.

DIABETIC BANANA PUDDING
My Aunt Shirley has been making this for several years. It is a traditional request for our Christmas dinners. She has been a Diabetic for close to 15 years, and this recipe is great for those with Diabetes.

Steps:
- 1. Prepare pudding per box directions. USE SKIM MILK.
- 2. Fold in Cool Whip & mix thoroughly. Crush 1/2 cup vanilla wafers for topping.
- 3. Using a 9 x 13 casserole dish, layer wafers, bananas and pudding. Layer until you run out of ingredients. Sprinkle wafers on top. Cover and chill 4 to 6 hours before serving.
QUICK BANANA PUDDING (SUGAR FREE, LOW FAT)
Not a boiled custard pudding, but certainly a waist-line friendly, diabetic acceptable family dessert. Cooking time is really chilling time.

SOUTHERN BANANA PUDDING
This is an old Southern recipe, featuring a comforting custard layered with bananas and vanilla wafers, then topped with a meringue. I serve it all year-round...it's a nice ending to most any meal.

- Preheat oven to 350°. In a large saucepan, combine sugar and flour. Stir in milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. , Remove from heat. Stir a small amount of hot milk filling into egg yolks; return all to pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from heat; gently stir in butter and vanilla. , In an ungreased 8-in. square baking dish, layer a third of the vanilla wafers, bananas and filling. Repeat layers twice., For meringue, beat egg whites, vanilla and cream of tartar on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff peaks form. Spread evenly over hot filling, sealing edges to sides of dish. Bake until meringue is golden, 12-15 minutes. Cool on a wire rack 1 hour. Refrigerate at least 3 hours before serving. Refrigerate leftovers.
