DIANA'S LAMB & RICE NOODLE SPECIAL

Im not a fan of Italian food because of my wheat allergy but I like Spaghetti noodles, specifically rice noodles. I came up with a Greek-style spaghetti using lamb instead of pork or you can substitute turkey, just an alternative for the traditional recipe. I love it, being a bit Greek.

Steps:

  • Brown ground lamb in large skillet, about 10 minutes.
  • Add spices, diced tomatoes and tomato paste. Simmer for 15 minutes.
  • Cook on low for 1 hour in skillet, covered.
  • Boil Noodles as package suggests. While the noodles are boiling, add Kalamata Olives to the meat sauce and heat for 10 minutes.
  • Drain Noodles Serve meat sauce on top with 1-2 T. of feta cheese. Serve with Greek sesame bread and butter if desired.

10 large kalamata (greek) olives whole
1/4 package(s) rice noodles
1/2 cup(s) crumbled feta cheese

RICE NOODLES WITH SPICY PORK AND HERBS

This cold rice-noodle dish, dressed in vinegar and chile oil and topped with spicy pork, herbs and peanuts, has roots in Yunnan, a southwestern Chinese province, where the garnish may vary according to the kitchen and season. The dish is quick to put together but can be served at a leisurely pace: Plate it, or set all of the components on the table and let people put together their own bowls the way they like, to their taste. The chef Simone Tong, who runs a Yunnan-inspired noodle restaurant in Manhattan, makes her version with ground pork, peanuts and a mix of fresh herbs but adds raw breakfast radishes and lacto-fermented pickles as well, for extra crunch and flavor. Feel free to do the same, or not; it's in the spirit of the dish to improvise with what's in season and what's on hand.

Rice Noodles With Spicy Pork and Herbs image

Steps:

  • Bring a large pot of water to boil, and cook noodles according to instructions. Drain noodles while running under cold water, until they are cool to the touch. Set aside. Mix dressing by whisking rice vinegar, soy sauce, black vinegar, chile oil and sugar until sugar dissolves. Set aside.
  • Cook the pork topping: Heat oil in saucepan over medium heat, and add ground pork and salt. Pan-fry, breaking meat into small pieces with a wooden spoon, until no pink parts and no liquid remain in the pan, about 5 minutes. Add garlic, ginger and scallion whites, and stir occasionally until the raw smell has disappeared and the meat is starting to brown in places, about 5 minutes. Add the vegetables, if using, along with a tablespoon of water, and cook for 2 or 3 minutes more, or until mixture is darkened and thick. Set aside.
  • When you're ready to serve, divide cool, drained noodles into four individual bowls, and top each with a tablespoon of vinegar dressing followed by a pile of ground pork, herbs, peanuts and radishes, to taste. Serve with any remaining garnish, and additional chile oil and chile-oil solids, on the side.

LEBANESE LAMB AND RICE

I got this recipe from a Jordanian friend of mine. The rice mixture(without the lamb and after it has been cooked) can also be stuffed into baking hens before baking. It's delicious served with Pita bread, hummus and Mediteranian olives.

Lebanese Lamb and Rice image

Steps:

  • Brown lamb in a bit of butter and set aside.
  • Saute' onion in rest of butter, until tender.
  • Add the rice, then saute' until rice is barely golden brown.
  • Add the water, pinenuts, cinnamon, allspice, cooked lamb and salt.
  • Bring to boil, cover and reduce heat to low, cook 30 minutes or until rice is done.
  • NOTE: This can be used with lamb that is cut up in bite size pieces also.
  • If there is a bone in the lamb, you can add more flavor to the dish by browning the bone and letting it cook with the rice, then remove the bone when serving the dish (but of course you know that).

  • Heat half the sesame oil in a large frying pan or wok over a high heat. Add the lamb mince and use a wooden spoon to break the meat down into smaller pieces. Fry for 6-8 minutes until really crisp, stirring occasionally.
  • Meanwhile, bring a pan of salted water to the boil. Drop in the egg noodles and broccoli florets. Bring back to the boil and cook for 3 minutes, then drain and set aside.
  • Mix the soy sauce, chilli flakes and sesame seeds into the crispy mince, then transfer to a bowl using a slotted spoon, and put the pan back on the heat. There’s no need to clean the pan as the bits all add flavour.
  • Heat the remaining sesame oil and add the garlic, ginger, most of the spring onions, the broccoli stalks and pak choi. Stir-fry for 2 minutes until the pak choi has started to wilt, then tip the cooked noodles, broccoli florets and crispy mince into the pan. Give everything a good stir to mix and heat through. Serve topped with the remaining spring onions. Drizzle with extra soy and a few drops of sesame oil at the table, if you like.

  • If making your own noodles make sure the dough is fully prepared before beginning the lamb stir fry. Set a pot of water to boil so that it will be ready to boil the noodles as soon as the lamb is done.
  • Add the cumin, Sichuan peppercorns, and coriander to a dry pan and heat over medium-low heat. Stir and toss frequently. Toast until the spices are fragrant and beginning to pop, about 5 minutes. Take the spices off the heat and grind until partially powdered. You can use a mortar & pestle, a spice grinder, a coffee grinder, or by crushing the spices with the bottom of a heavy pan.
  • Add the oil to a large skillet and heat over high heat until the oil begins to smoke. Add the marinated lamb and spread it into a single layer. Separate the individual slices with minimal overlapping using a pair of tongs or chopsticks. Add the garlic and ginger on top. Leave the lamb to sear for 30 seconds to a minute until the bottom is browned.
  • If using hand-pulled noodles - Take your prepared dough, stretch each piece, and add it to the boiled water. Cook them for 1 to 2 minutes.
