CHICKEN DIANE STYLE
Chicken breasts sauteed with onions and mushrooms, then braised in herbs, spices and a brandy/chicken broth mixture. Simmer all together and smile!

Steps:
- Saute onions and mushrooms in a large skillet over medium heat. Remove onion/mushroom mixture from skillet and reserve; add chicken breasts to skillet. Saute for 4 minutes, then turn over and add mushroom mixture on top.
- In a small bowl mix salt, pepper, paprika, chives and parsley together then sprinkle mixture over chicken. In a medium bowl combine the broth, brandy and mustard and blend together. Pour over chicken, reduce heat to low and simmer for 20 to 25 minutes or until chicken is cooked through (no longer pink inside).

Steps:
- Cut beef into 3cm pieces.
- Heat oil in large pan and add beef in batches, cook stirring, until browned.
- Return beef and any juices to pan and add garlic and onion, cook, stirring until onion is soft.
- Add undrained crushed tomatoes, stock and sauce and simmer covered about 1 1/2 hours or until beef is tender.
- Add remaining ingredients, simmer uncovered about 5 minutes or until slightly thickened.
- Serve with pasta and extra chopped parsley.

This recipe is used with beef casserole base #48835 (recipe posted). It's really delicious and once the beef base is done it is so quick and easy to prepare.

- Heat oil in a pan.
- Add garlic, cook one minute.
- Add undrained chopped tomatoes, sauce, cream, brandy and parsley.
- Simmer for 8 minutes until sauce is thickened.
- Add beef base and simmer another 10 minutes.
- Serve.
- Goes well with pasta or mashed potaotoes or vegetables.
