DIJON CRUSTED HALIBUT

Delightful baked halibut breaded with a spicy mixture of Dijon mustard, horseradish, fresh Parmesan cheese and bread crumbs.

Dijon Crusted Halibut image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
  • In a small bowl, mix together mayonnaise, mustard, horseradish, and lemon juice. Stir in 1/4 cup bread crumbs and 1 tablespoon Parmesan cheese. Arrange fish fillets on the prepared baking sheet. Spread bread crumb mixture evenly over fish.
  • In a small bowl, mix together melted margarine, 1/4 cup bread crumbs, and 1 tablespoon Parmesan cheese. Sprinkle over the coated halibut.
  • Bake for 15 to 18 minutes, or until fish flakes easily with a fork.

This recipe is from a low fat cooking site. The original recipe calls from Dijon mustard and broiling the fish. I used a coarse ground mustard and grilled the fillets outside.

Steps:

  • In a small bowl combine the vinegar, mustard and brown sugar.
  • Place the fillets in a ziplock bag and pour vinegar mixture over.
  • Turn to thoroughly coat the fillets and refrigerate for an hour.
  • Remove the fillets from marinade and grill over medium coals for 6 to 7 minutes per side or until fish is opaque and flakes easily.

Steps:

  • Preheat grill to medium. Coat the grill rack with nonstick cooking spray.
  • Combine all ingredients but fish and optional parsley. Brush over fish.
  • Grill fish, covered with grill lid, 6 to 8 minutes on each side or until fish flakes with a fork.
  • Garnish with additional parsley, if used.
