Steps:

  • In a pitcher, combine the clam-tomato juice, lime juice, orange juice, hot sauce, Worcestershire, black pepper, ginger, salt, bitters and serrano. Stir well.
  • To serve, rim a pint glass with salt. Fill the glass with ice, then fill halfway with the Dirty Bird mixture. Top off with Mexican beer, about 5 ounces. Repeat.

1 quart clam-tomato juice, such as Clamato
1 cup fresh lime juice
1/2 cup orange juice
4 bar spoons (4 teaspoons) Asian hot sauce, such as Sriracha
4 bar spoons (4 teaspoons) Worcestershire sauce
1 bar spoon (1 teaspoon) ground black pepper
1/2 bar spoon (1/2 teaspoon) ground ginger
1/2 bar spoon (1/2 teaspoon) salt, plus more for rimming glasses
6 dashes orange bitters
1 serrano chile, sliced
30 ounces Mexican beer (preferably from tap)

WEIRD SPAGHETTI

Traditionally this is Cincinnati Chili, although I grew up with it as "Farmer's Market Spaghetti" that my Grandmother discovered at the 1933 World's Fair. I deemed it Weird Spaghetti as a child, but "Good weird! A family favorite, we enjoy with just pasta and cheese. Cincinnati Chili is served with shredded Cheddar, oyster crackers, chopped onion and kidney beans.

Weird Spaghetti image

Steps:

  • In a large saute pan over medium heat, brown the ground beef while breaking the mass into smaller pieces. While the meat is cooking and still a little pink, add the onion and saute until the beef is fully cooked and the onion turns translucent. Drain all of the fat from the pan. Add all the dry spices and cook for 2 to 3 minutes more, then stir in the tomato sauce. Once combined, incorporate the beef stock, vinegar and Worcestershire sauce. Bring to a simmer and cook for 1 hour. Put the cooked bucatini in a serving bowl and add the meat sauce. Garnish with Parmigiano-Reggiano and serve.

2 pounds ground beef, (80/20 lean muscle to fat ratio)
1 onion, finely diced
2 1/2 teaspoons ground cinnamon
2 1/2 teaspoons ground cloves
2 1/2 teaspoons ground cumin
2 1/2 teaspoons powdered ginger
2 1/2 teaspoons dry mustard
1 teaspoon freshly grated nutmeg
1/2 teaspoon kosher salt
3/4 teaspoon cocoa powder
1 1/2 cups tomato sauce
4 cups low-sodium beef stock
2 tablespoons apple cider vinegar
2 tablespoons Worcestershire sauce
1 pound bucatini noodles, boiled in salted water, drained
1/4 cup freshly grated Parmigiano-Reggiano

Steps:

  • In a blender or food processor, add the chipotle peppers, 3 garlic cloves, chicken stock, oregano, cumin, salt, and Mexican chocolate. Blend well.
  • In a frying pan add butter, remaining chopped garlic, and chopped onions, saute for 5 minutes. Add chicken breasts. Cook until almost done. Add sauce to pan. Reduce the heat and cook until sauce is thick.

1 pinch dried oregano
1 pinch ground cumin
1 pinch salt
1/4 cup Mexican chocolate
2 tablespoons butter
