RICE-STUFFED PEPPERS

Mother used to fix this wonderful, easy dish when we had company. She was from a family of fantastic Cajun cooks, so our food was always well-seasoned. In Louisiana, rice is part of many meals. The cheese sauce sets these stuffed peppers apart from any others I've tried. -Lisa Easley, Longview, Texas

Rice-Stuffed Peppers image

Steps:

  • In a Dutch oven, cook beef, onion, chopped green pepper, garlic, salt and pepper over medium heat until beef is no longer pink; drain. Add the water, tomatoes, tomato sauce and cumin. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. , Stir in rice; simmer, uncovered, for 5 minutes. Remove from the heat; cover and let stand for 5 minutes. , Remove tops and seeds from the peppers; cut in half widthwise. Place in a large pan of boiling water; boil for 4 minutes. , Drain peppers and stuff with meat mixture. Place remaining meat mixture in an ungreased 13x9-in. baking dish; top with stuffed peppers, pressing down gently. Cover and bake at 350° for 1 hour. In a saucepan, heat sauce ingredients until cheese is melted. Serve over peppers.

2 pounds ground beef
1 medium onion, chopped
1 small green pepper, chopped
2 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon pepper
3-3/4 cup water
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (10 ounces) diced tomatoes and green chiles, undrained
1 can (15 ounces) tomato sauce
1 tablespoon ground cumin
3 cups uncooked instant rice
4 medium green peppers
CHEESE SAUCE:
1-1/2 pounds American cheese, cubed
1 can (10 ounces) diced tomatoes and green chiles, undrained

DIRTY RICE STUFFED PEPPERS

Called dirty rice because the ground meat gives it a dirty color, the flavorful Cajun rice filling is a delicious twist on the usual stuffed peppers.

Dirty Rice Stuffed Peppers image

Steps:

  • 1. Cut caps off the peppers and remove seeds. Cut the extra pepper away from the stems and chop that part up.
  • 2. Place the peppers upside down in a square glass baking dish with the 1/4 cup water, cover with plastic wrap and microwave on high for 8 minutes.
  • 3. Drain the peppers and turn right side up.
  • 4. Preheat the oven to 375F.
  • 5. Brown the meats in a nonstick skillet with the garlic and thyme; drain excess fat.
  • 6. Add the chopped bits of peppers with the onion and celery to the pan and cook until tender.
  • 7. Add spices and bouillon when the veggies are tender and mix well.
  • 8. Add the half cup of water along with the Worcestershire sauce, Tabasco and tomato paste, mixing well and cooking until the liquid evaporates, then stir in the cold crumbled rice.
  • 9. Fill peppers with the rice/meat mixture and sprinkle tops with the Parm. If the peppers have too much space around them, I crumple some foil to fill that so they don't turn over and spill the filling while they bake.
  • 10. Bake for 25 minutes or until the cheese is melted, lightly browned and they are heated through.

4 bell peppers
1/4 c water
1/2 c chopped onion
2 Tbsp olive oil
4 oz fresh andouile sausage or other pork sausage
4 oz ground beef
1 Tbsp minced garlic
1 tsp dried thyme
1/2 c chopped celery
1 Tbsp powdered chicken bouillon
1 Tbsp tony chachere's salt-free cajun seasoning
1 tsp black pepper
1/4 tsp bay leaf powder
1/2 c water
1 Tbsp worcestershire sauce
1 Tbsp tomato paste
tabasco sauce to taste
1 c cold leftover steamed white rice, crumbled
1/4 c shredded parmesan cheese

NAWLINS-STYLE STUFFED BELL PEPPERS

This spicy filling is perfect for stuffed peppers. I cheat and use Zatarains Dirty Rice Mix, works well with any Dirty Rice recipe.

Nawlins-Style Stuffed Bell Peppers image

Steps:

  • Brown ground beef with garlic, onions and celery.
  • Prepare Dirty Rice.
  • Add beef mixture to Dirty Rice and simmer for 25 minutes.
  • Remove from heat and let sit 5 minutes.
  • Preheat oven to 350°F.
  • Prepare peppers by coring, removing seeds and cuting off tops (level the bottoms of any uneven so that they stand upright on their bottoms).
  • Beat egg with Frank's Red Hot sauce and add 1 cup cheese to egg mixture.
  • Add egg mixture to dirty rice/beef mixture.
  • Stuff each pepper to the top with meat and rice mixture, and place in glass baking dish.
  • Cover loosely with Alumnium Foil.
  • Cook in oven for 25 minutes.
  • Remove from oven, uncover and top each pepper with remaining cheese. Bake uncovered for an additional 10 minutes.
  • When finished, remove from oven and let sit 5 mins before serving.

1 lb extra lean ground beef

2 tablespoons hot pepper sauce (I use Frank's Red Hot)

I love stuffed peppers! I wanted to try something a little different and started creating this new recipe. What a hit this was. It is savory and not too spicy. Just right! My recipe calls for 8 peppers, but you can half the recipe if you like.

Creole Stuffed Peppers image

Steps:

  • 1. First, brown the ground beef, onions, garlic and celery. Season with salt and pepper to your taste.
  • 2. Next, add the package of Zatarain's Dirty rice, rotel tomatoes and 1 can of tomato sauce, simmer until the liquid is absorbed and rice is done. Keep the pot covered.
  • 3. Stuff the peppers with the rice mixture and place them in a baking dish. Open the other can of tomato sauce and put 2 tablespoons of sauce on each pepper. Cover with foil and bake for one hour at 350 degrees.
  • 4. Remove the peppers from the oven. Put cheese on top and [lace back in the oven uncovered until the cheese melts.

2 lb lean ground beef
1 1/2 c diced celery
1 1/2 c diced onion
4 clove garlic, minced
1 can(s) 10 oz. can of original rotel tomatoes

  • Heat 1 Tablespoon oil in a large skillet over medium-high heat then add sausage, and 2/3 of both the celery and onion. Season with Cajun seasoning then saute until vegetables are tender, 8-10 minutes, turning heat down if vegetables begin to burn. Add 2/3 of the minced garlic then saute for 1 more minute. Add rice, 2 cups chicken broth, and more Cajun seasoning to taste then turn heat up to bring broth to a boil. Place a lid on top then turn heat down and simmer until rice has absorbed all the broth and is tender, 15-20 minutes. Stir in parsley.
  • Scoop rice mixture inside bell pepper halves then cover baking dish with foil and bake for 35 minutes. Turn heat up to 400 then remove foil and bake for 10 more minutes, or until peppers are crisp tender.
  • Meanwhile, heat remaining 1-1/2 Tablespoons oil in a saucepan over medium heat then add remaining onion and celery. Season with Cajun seasoning to taste then saute until vegetables are soft, 10 minutes, turning heat down slightly if vegetables begin to burn. Add remaining garlic then saute for one more minute. Add bay leaf, thyme, remaining 2 Tablespoons chicken broth, and crushed tomatoes then turn heat up to bring mixture to a bubble. Turn heat down to medium-low then simmer, partially covered or topped with a splatter screen, for 10 minutes. Taste then adjust seasonings if necessary. Plate peppers then top with sauce and serve.
