These scrumptious swirled confections are wonderful for gift-giving or adding to a plate of homemade candies.

Steps:
- Cook sugar, corn syrup and water (use 1 tablespoon less water on humid days) in 2-quart saucepan over low heat, stirring constantly, until sugar is dissolved. Continue cooking, without stirring, to 260°F on candy thermometer or until small amount of mixture dropped into very cold water forms a hard ball that holds its shape but is pliable.
- Beat egg whites in medium bowl with electric mixer on high speed until stiff peaks form. Continue beating while pouring hot syrup in a thin stream into egg whites, beating constantly on medium speed. (For best results, use electric stand mixer, not a portable handheld mixer since beating time is about 10 minutes and mixture is thick.) Add vanilla. Beat until mixture holds its shape and becomes slightly dull. (Mixture may become too stiff for mixer.) Gently stir in nuts.
- Drop mixture from buttered spoon onto waxed paper. Let stand at room temperature at least 12 hours, turning candies over once, until candies feel firm. Store in airtight container.

This is a soft white candy made with light corn syrup.

- In a heavy, 2 quart saucepan, combine the sugar, corn syrup, hot water, and salt. Cook and stir until the sugar dissolves and the mixture comes to a boil. Then cook to hard ball stage without stirring, 250 degrees F (120 degrees C.) Frequently wipe crystals forming on the sides of the pan, using a pastry brush dipped in water. Remove from heat.
- Just as the syrup is reaching temperature, begin whipping egg whites: In a large glass or stainless steel mixing bowl, beat egg whites until stiff peaks form. Pour hot syrup in a thin stream over beaten egg whites, beating constantly with the electric mixer at medium speed. Increase speed to high, and continue beating for about 5 minutes. Add vanilla; continue beating until the mixture becomes stiff and begins to lose its gloss. If it is too stiff, add a few drops hot water.
- Immediately drop by teaspoonfuls onto waxed paper. For a decorative flair, twirl the top with the spoon when dropping. Let stand until set. Store in an airtight container at room temperature.

- In a 2 quart saucepan combine sugar, corn syrup, water, and salt.
- Cook to hardball stage, (260 degrees), stirring only until sugar dissolves.
- Meanwhile, as temperature of syrup reaches 250 degrees, beat egg white till stiff peaks form.
- When syrup reaches 260 degrees, very gradually add the syrup to egg whites, beating at high speed with electric mixer.
- Add vanilla and beat until candy holds its shape, 4-5 minutes.
- Stir in the chopped nuts or cherries, if desired.
- Quickly drop candy from a teaspoon onto waxed paper, swirling the top of each piece.
- Let cool.

DIVINITY SALAD
What I love about this jello-based salad is that it's not too sweet. Like the name implies, it is a "heavenly" accompaniment to everything else on your plate. If you like pina coladas, you'll love this salad. I think it got the name because it looks like a bowlful of divinity candy once it has set up (note that it needs to be refrigerated 12-24 hours before serving). I hope you enjoy this family favorite!

- Dissolve the jello, salt and sugar in the boiling water. Place in the fridge and let cool for about 5 minutes.
- While jello mixture is cooling, whip the whipping cream using a mixer on high speed. The whipped cream is ready when it thickens and peaks. Be careful not to over whip.
- Add the following to the jello mixture: cottage cheese, pineapple, mayo and nuts. Mix well.
- Now gently fold the whipped cream into the jello mixture. This will make the mixture very light and fluffy.
- Pour into a pretty presentation bowl.
- For a nice presentation at holiday time, garnish with the maraschino cherries and a sprig of parsley to look like holly berries.
- Cover and refrigerate for 12-24 hours.

JELLO DIVINITY
This is best done with a stand alone mixer or 1 person holding a hand mixer and another person adding the ingredients... It can not be done by hand. You will also want another set of hands to help drop these candies before they stiffen. I don't know any way to soften this mixture once it has set. These are wonderful to eat...

- 1. In a medium saucepan over a low burner, combine sugar, Karo, vanilla and water. Bring to a boil, stirring to dissolve sugar. Heat to 250-265° or to a hard ball stage.
- 2. Meanwhile, beat egg whites until stiff; slowly add gelatin while beating until stiff peaks form. Continue beating and slowly pour syrup mixture in a thin stream over the egg mixture. Beat until mixture thickens and loses its gloss. Stir in nuts.

- Place egg whites in the bowl of a stand mixer; let stand at room temperature for 30 minutes. Meanwhile, line three 15x10x1-in. pans with waxed paper., In a large heavy saucepan, combine the sugar, water and corn syrup; bring to a boil, stirring constantly to dissolve sugar. - Heat oven to 325°F. Line 2 large cookie sheets with cooking parchment paper.
- Place dry frosting mix, corn syrup, vanilla and boiling water in bowl of electric stand mixer fitted with whisk attachment. Mix on low speed until blended. Beat on high speed 5 to 7 minutes, scraping bowl occasionally, until stiff peaks form. On low speed, gradually beat in powdered sugar, scraping bowl occasionally. Stir in nuts. Drop mixture by teaspoonfuls onto lined cookie sheets.
- Bake 5 minutes; remove from oven. Slide parchment paper with candies from cookie sheet onto cooling rack. Let stand about 4 hours on parchment paper or until tops of candies feel firm. Remove candies from parchment paper, using small icing spatula to loosen edges if needed. Turn candies over, and place bottom sides up on cooling racks. Allow candies to dry at least 12 hours. Store in airtight container with waxed paper between layers.
