CARAMEL APPLE TART
This recipe is from Bon Appetit magazine. My husband loves apple pie, but I wanted to try something different. I made this and had one piece. My good friend had one piece. The next morning, it was completely gone... my husband loved it!

Steps:
- For caramel sauce:.
- Bring sugar, cream, and butter to boil in heavy medium saucepan over medium-high heat, whisking constantly until sugar dissolves. Boil until caramel thickens enough to coat spoon thickly, whisking often, about 10 minutes. DO AHEAD Caramel sauce can be made 5 days ahead. Cover; chill. Whisk over low heat until warm before using.
- For crust:.
- Blend flour, powdered sugar, and salt in processor. Add butter and blend until coarse meal forms. Add egg yolks. Pulse until moist clumps form. Gather dough into ball; flatten into disk. Wrap and chill at least 1 hour. DO AHEAD Dough for tart crust can be made 1 day ahead. Keep chilled.
- For filling:.
- Whisk first 4 ingredients in large bowl to blend. Add apples and toss until evenly coated.
- Preheat oven to 375°F Roll out dough on lightly floured surface to 13-inch round. Transfer to 9-inch-diameter tart pan with removable bottom. Cut overhang even with top of pan sides. Press sides of dough to bring 1/4 inch above sides of pan. Arrange apple quarters, cut side down, in circle around outer edge of pan, fitting snugly. Cut remaining apple quarters lengthwise in half; stand in center of tart, fitting snugly.
- Bake tart until apples are tender, about 1 hour 15 minutes. Remove tart from oven; brush with some of caramel sauce. Cool tart to room temperature. Rewarm remaining caramel sauce. Drizzle tart lightly with sauce. Serve, passing remaining sauce separately.

- In a large bowl, combine flour, sugar and salt; cut in butter until crumbly. Gradually add water and vanilla, tossing with a fork until dough forms a ball. Cover and refrigerate until easy to handle, about 30 minutes. , Preheat oven to 400°. On a lightly floured surface, roll dough into a 10-in. circle. Transfer to a parchment-lined baking sheet. Combine the filling ingredients; spoon over crust to within 2 in. of edges. Fold up edges of crust over filling, leaving center uncovered. Combine sugar and cinnamon; sprinkle over filling. Whisk egg and water; brush over crust., Bake until crust is golden and filling is bubbly, 25-30 minutes. Using parchment, slide tart onto a wire rack. Drizzle with caramel topping. Serve warm.

DOUBLE APPLE CARAMEL CAKE
There is just something about apples and caramel together we love. This awesome dessert is fall in every bite. The apple cake reminds us of an apple cobbler. It has a crunchy top with a soft and juicy inside. Make sure to serve this while warm. The ice cream melts a bit and even more magic happens.

- 1. Add cake mix, eggs, applesauce and water to a bowl. Mix until smooth.
- 2. Pour into a lightly greased 9x13 glass or metal cake pan. Smooth into the pan.
- 3. Pour the apple pie filling into the center of the cake batter.
- 4. Spread lightly to the ends of the pan but, not all the way.
- 5. Bake at 350 for 35 to 40 minutes.
- 6. Drizzle caramel over hot cake. Top with vanilla ice cream and drizzle more caramel on top.

- Combine the first four ingredients. Press onto the bottom of an ungreased 9-in. springform pan. In a bowl, beat cream cheese and sugar. Add eggs and vanilla; mix well. Pour over the crust. DOUBLE CARAMEL APPLE COOKIES
We love caramel and apples, so this cookie caught our eye. We were definitely not disappointed. It has all the classic fall flavors packed inside. As you bite into the caramel apple cookie, there are bits of fresh apple and caramel oozes out. Yum!

Steps:
- 1. Soften the butter and shortening together until no solid chunks remain when mixed.
- 2. Add applesauce and brown sugar. Cream together.
- 3. Add cinnamon and baking powder. Mix well to distribute the cinnamon.
- 4. Add eggs and vanilla; mix well.
- 5. Slowly add in flour. You may need to add a little more until the dough is sticky but not wet looking.
- 6. Add in the crushed caramels and the diced apple until evenly distributed.
- 7. Refrigerate dough until firm (about 10 minutes).
- 8. Use a cookie dough scoop or two spoons to make a ball of dough about the size of a ping-pong ball. Slightly flatten. Take a ball of soft caramel and place it in the middle and wrap the dough around it to close the caramel inside. Place the ball with the side where the opening was up on a cookie sheet sprayed with Pam (this will prevent the caramel from "leaking" out).
- 9. Bake at 350 for 18-20 minutes depending on your oven. They won't look very brown on top but the edges on the bottom should be golden.
- 10. Carefully remove from the cookie sheet using a spatula. These are tender and with the melted caramel hot they can break easily if you aren't careful. I suggest you move them to a separate pan or cooling rack soon after baking so that the caramel is still soft and easy to manipulate.
- 11. ***HOMEMADE SOFT CHEWY CARAMELS WITHOUT CORN SYRUP*** 3 cups sugar 2 cups heavy cream 1 cup milk (regular not evaporated or condensed) 1 cup butter 1/2 cup honey 1/2 cup molasses 1 tsp vanilla 1. Combine all ingredients in a soup-size pan (large) over medium-high heat. 2. Stir continuously until the mixture pulls away slightly from the sides of the pan and only slowly flows off the back of a spoon, or when a candy thermometer reaches 245 degrees F. (You can test it by pouring a little onto a cool plate, waiting a few seconds and testing to see if it's soft. If it's still runny and won't hold its shape you need to keep waiting. This will take about 30 minutes. DON'T WAIT TOO LONG OR IT WILL HARDEN!!!) 3. Remove from heat and stir in the vanilla. It will steam and froth but just mix until smooth. 4. Pour into a 13x9 pan sprayed with Pam and let cool. ***If you let it cook a little longer then you will have the hard caramels I used in this cookie recipe.
CARAMEL APPLE TART
Steps:
- Prepare the pie crust according to package instructions. Roll the dough out between 2 pieces of waxed paper to 1/4-inch thickness. Invert a heavy bottom 10-inch nonstick skillet over the dough, trace the outside edge of the pan and trim the excess. Put the pie dough on a sheet tray, cover it in plastic wrap and refrigerate.
- Preheat oven to 375 degrees F.
- Slice each apple in 2 and place the halves in a bowl of water with a bit of lemon juice to keep them from browning. In a small bowl, combine the sugar with 2 teaspoons of pumpkin pie spice and the salt.
- Put the same skillet used to measure out the pie crust, over medium-high heat, and add the butter. Sprinkle 3/4 of the sugar mixture over the melted butter. Arrange the apple halves flat side down in the pan. Sprinkle the remaining sugar over the apples. Cook until the caramel syrup turns a deep golden brown color, about 15 minutes. Carefully arrange the chilled pie crust over the top of the cooked apples and use a spatula to tuck in the edges.
- Put the skillet in the oven and bake until the crust is cooked and is slightly brown in color, about 15 to 20 minutes. Remove the skillet from the oven and let it stand for around 5 minutes, then invert the pie onto a serving platter.
- In a medium bowl, using a hand mixer on medium speed, whip the heavy cream with the confectioners' sugar and the remaining 1/2 teaspoon of pumpkin pie spice until soft peaks form. Serve the warm tart on individual plates with a dollop of whipped cream.
X-TREME CHOCOLATE DOUBLE-NUT CARAMEL LADYFINGER TORTE RECIPE COURTESY SOUTHERN LIVING MAGAZINE
Steps:
- Microwave chocolate morsels on high for 90 seconds or until melted, stirring at 30 second intervals; cool 5 minutes, and set aside.
- Split ladyfingers, and stand halves around edge of a 9-inch springform pan, placing rounded sides against pan; line bottom of pan with remaining halves. Reserve remaining ladyfingers for another use. Spread hazelnut spread evenly over ladyfingers on bottom of pan.
- Cook caramels and 1/3 cup whipping cream in a medium saucepan over low heat, stirring constantly, just until melted. Stir in pecans until coated; spoon caramel mixture evenly over hazelnut spread.
- Beat 1/3 cup confectioners' sugar and cream cheese in a medium bowl at medium speed with an electric mixer until fluffy. Add crème de cacao; beat until blended. Beat in melted morsels until blended.
- Beat remaining 2 cups whipping cream in a medium bowl at medium speed with an electric mixer until stiff; fold into cream cheese mixture, and spoon evenly over caramel layer in pan.
- Shave baking squares with a vegetable peeler evenly on top. Sprinkle evenly with 2 tablespoons confectioners' sugar. Chill 1 hour before serving.

- Microwave 15 caramels and 2 Tbsp. milk in large microwaveable bowl on HIGH for 1-1/2 min. or until caramels are melted, stirring after 1 min. Add wafer crumbs and nuts; mix well. Press onto bottom of 9-inch tart pan with removable bottom or springform pan.
- Place remaining caramels and 2 Tbsp. milk in another large microwaveable bowl; microwave on HIGH 1-1/2 min. or until caramels are melted, stirring after 1 min. - Preheat oven to 400°F. Wrap outside of 9-inch-diameter springform pan with 2 3/4-inch-high sides with foil. Combine all ingredients in large bowl. Using fingertips, mix until moist dough clumps form. Gather dough into ball. Press onto bottom and 3/4 inch up sides of pan. Freeze 10 minutes. Bake until crust is light golden, about 10 minutes. Remove from oven. Reduce oven temperature to 350°F.
- Make filling:
- Beat all ingredients in large bowl until smooth. Pour filling into crust. Smooth top.
- Make topping:
- Combine sugar and cinnamon in large bowl. Add apple slices and toss to coat. Arrange atop filling. Sprinkle with almonds.
