DOUGHNUT CAKE POPS
Steps:
- Line a baking sheet with parchment paper. Dip one end of a lollipop stick into the melted chocolate and insert in a doughnut hole. Place on the prepared baking sheet and repeat with the remaining doughnut holes. Let set for 15 minutes. Reheat the remaining chocolate, if necessary. Dip each doughnut hole into the melted chocolate and let the excess drip off. Place upright in a cake pop holder or a Styrofoam block and immediately scatter colorful sprinkles over the pops. Let stand until set, about 15 minutes or up to 1 hour if you plan to package them. If you like, package the pops in cellophane wrappers tied with festive ribbon.

EASY CAKE POPS
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Beat cake mix, water, eggs, and vegetable oil together in a bowl using an electric mixer on low speed for 30 seconds; increase speed to medium and beat until batter is smooth, about 2 minutes more. Pour batter into the prepared baking dish.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, 28 to 33 minutes. Cool cake completely, at least 1 hour.
- Crumble cake into a large bowl and mix in cream cheese. Roll cake mixture into about 40 to 50 quarter-size balls. Insert a lollipop stick into each cake ball and arrange on a baking sheet; refrigerate until chilled, at least 30 minutes.
- Melt chocolate in a microwave-safe glass or ceramic bowl in 15-second intervals, stirring after each melting, 1 to 3 minutes.
- Dip each cake ball into melted chocolate until coated. Arrange cake pops on a baking sheet to dry.

Birthdays, Easter, baby showers, or just because they are cute and taste good! Got this recipe from a friend and I must share... enjoy! There are many ways to be creative when making these... there are dozens of different types of sprinkles, or you can use different colors of candy melts and no sprinkles if you wish. Almost everything can be bought at a crafts store.

Steps:
- Place about 1/4 cup of candy melts into a small microwave-safe bowl, and melt in the microwave at 40 percent power for 30 seconds; stir the candy coating, and continue to heat for 30 second-intervals until the coating is just warm and completely melted.
- Poke a hole halfway through a doughnut hole with a lollipop stick, then dip the end of the stick into the melted coating and reinsert into the hole. This holds the doughnut hole firmly on the stick. Stick the doughnut pop upright into a block of plastic foam, and set into refrigerator for 1 hour to firm up.
- When pops are firmly attached to their sticks, melt the remaining candy coating dots in a microwave-safe bowl on 40 percent power for 1 minute; stir, and melt for 30-second intervals until the coating is warm and smoothly melted. Dip the doughnut hole into the coating, covering it completely. Hold the dipped pop over a bowl, and sprinkle with colored candy sprinkles. Return the decorated pops to the plastic foam block to set.

- In a large bowl, stir together the flour, 1/2 cup sugar, baking powder, salt, 1 teaspoon of cinnamon and nutmeg. Make a well in the center and pour in the milk, egg, butter, and vanilla. Mix until well blended. Cover and refrigerate for 1 hour.
- Heat oil in a deep heavy skillet or deep-fryer to 370 degrees F (185 degrees C). On a floured board, roll chilled dough out to 1/2 inch thickness. Use a 3 inch round cutter to cut out doughnuts. Use a smaller cutter to cut holes from center. If you do not have a small cutter, use the mouth of a bottle.
- Fry doughnuts in hot oil until golden brown, turning once. Remove from oil to drain on paper plates. Combine the remaining 1/2 teaspoon cinnamon and 1/2 cup sugar in a large resealable bag. Place a few warm donuts into the bag at a time, seal and shake to coat.

- Using a double boiler*, melt chocolate or candy wafers. Be careful to use low heat and stir occasionally so you don’t burn it. Also do not let any moisture get into your melting wafers or it may seize up.
- When it’s completely melted, dip the tip of your lollipop stick about a half inch into the melted chocolate and press it into the top of the donut hole. Place the donut hole onto a parchment paper or Silpat lined baking sheet.
- Repeat with all 24 donut holes. Place them into the refrigerator for 10 minutes or until the chocolate has hardened.
- Then take them out and dip each one all the way into the melted chocolate, letting the excess drip off. I use a spoon to sort of scrap the excess of the bottom. Remember you won’t see this part because it will be underneath.
