PERFECTLY BAKED BEANS

- Adjust the oven rack to the lower-middle position and preheat the oven to 325 degrees F.
- Fry the regular chopped bacon in a large, deep skillet until the bacon has partially cooked and released about 1/4 cup drippings. Add the onions, peppers and jalapenos, and saute until tender, about 5 minutes. Add the beans, barbecue sauce, brown sugar, vinegar, ketchup, mustard and chipotles, and bring to a simmer. (If the skillet is not large enough, add the beans and heat to a simmer and then transfer to a large bowl and stir in the remaining ingredients). Pour the flavored beans into an aluminum pan. Top with the uncooked slices of bacon (you can halve the slices if you like). Then bake until the beans are bubbly and the sauce is the consistency of pancake syrup, about 2 hours. Let stand to thicken slightly and serve.
DRESSED UP BAKED BEANS
This recipe was on the back of a Domino Dark Brown Sugar box. I have been making these beans for a very long time. There are never any leftovers. Even people who think they don't like baked beans enjoy them. Surprise!!!! lol

- 1. Pre-heat oven to 350 degrees. In 2 quart casserole, stir together beans, onion, brown sugar, ketchp and mustard. Bake, uncovered, for 1 hour, or until hot and bubbly. Enjoy!
- 2. **Microwave Directions: in 2 qt. microwave safe dish, place onion. Cover with plastic wrap, vented, and microwave on high 2 minutes until onion is soft. Add beans, brown sugar, ketchup and mustard: gently mix well. Cover with vented plastic wrap and microwave on high for 6 minutes. Stir. Uncover completely, and continue to microwave on high for a final 6 minutes. Stir well, and serve.

Steps:
- In a medium saucepan over medium heat, heat oil and then cook onion and green pepper, stirring frequently, until tender.
- If necessary, add a bit of water or broth so it doesn't stick.
- Stir in beans and drained pineapple.
- In a small bowl, stir cornstarch into reserve pineapple juice.
- Add to saucepan.
- Add spices.
- Cook, stirring, until it boils.
- Cook and stir 1 minuter longer.

DRESSED UP, SLOW COOKED CANNED BAKED BEANS
My sister turned me on to this wonderful way to dress up canned baked or barbeque beans (and she nabbed it from our cousin). They are delightful, and such an easy way to make canned taste homemade. I love to serve these with barbequed meat, and either cold slaw or potatoe salad. This recipe can easily be adjusted to serve the number of people in your party. You can also add more or less brown sugar, depending on how much sweetness you prefer.

- Place beans in saucepan.
- Add diced jalapenos, with juice (add as much juice as you prefer, based on how spicy you want it).
- Add bacon and brown sugar.
- Stir well.
- Bring to a boil and then turn down heat to simmer.
