ZUCCHINI CREAM PIE

Tried this for the first time at a church pot-luck. It was sooooo good, I begged for the recipe. I hope ya'll will like it as much as my family does!

Zucchini Cream Pie image

Steps:

  • 1. In saucepan, cover zuchinni with water, and boil about 4 minutes. Drain.
  • 2. Pour zuchinni into a blender with sugar, egg, flour, butter, milk, and vanilla. Blend till smooth.
  • 3. Pour mixture into unbaked pie shell. Sprinkle with nutmeg.
  • 4. Bake at 425 degrees for 10 minutes; reduce heat to 350 degrees, and bake for another 35 mins.
  • 5. Serve plain, or with a dollop of whipped cream.

1 c zuchinni (peeled & seeds removed) cut into 1 inch chunks
1 c sugar
1 egg
2 Tbsp flour
1 c evaporated milk
1 1/2 Tbsp margarine or butter
1 tsp vanilla
nutmeg

  • Put all ingredients into food processor or blender and blend well.and pour into an unbaked 9" pie shell.
  • Bake in preheated 350* oven or 55 minutes or till knife inserted in center comes out clean.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 10x6-inch pan or a 12-inch pie plate.
  • In a medium mixing bowl, combine zucchini, onion, eggs, buttermilk baking mix, vegetable oil, Parmesan cheese, marjoram, parsley and pepper; mix well. Spread into the prepared baking dish.
  • Bake for 30 minutes, or until lightly brown.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Unroll crescent rolls, and press into a 9-inch pie pan, covering sides and bottom.
  • Melt margarine in a skillet over medium heat, and cook the zucchini and onion until tender. Season with parsley, oregano, salt, and pepper. Remove skillet from heat. Cool zucchini mixture slightly, then mix in eggs and cheese. Pour mixture over the crust.
  • Bake 20 minutes in the preheated oven, until set. Cool for 10 minutes before serving.
