GRANDS LITTLE FRUIT PIES

This was a Pillsbury Bake-Off 40(Hollywood, 2002)$10,000 winner for S.Lea Mead from San Mateo, Ca. A tasty fruit filled pie gets a tender streusel topping in these "small" but powerful tasting little pies.

Grands Little Fruit Pies image

Steps:

  • Heat oven to 350°F.
  • Combine flour, brown sugar and cinnamon.
  • With pastry blender or fork cut in butter or margarine until mixture coarse crumbs.
  • Separate dough into 8 pieces; split each biscuit in half.
  • With floured fingers, flatten each biscuit to form 4" round.
  • Press each biscuit in ungresed 2-3/4 x 4 x 1-/4" muffin cup.
  • Spoon 2 tablespoons pie filling into each biscuit-lined cup.
  • Sprinkle each with 2 tablespoons flour mixture (cups will be full).
  • Bake for 15-22 minutes or until golden brown.
  • Cool 5 minutes.
  • Remove from muffin cups; place on wire rack, cool for 10 minutes.
  • In a small bowl, beat whipping cream until stiff peaks form.
  • Top each serving with dollop of whiiping cream; sprinkle with cinnamon sugar.
  • Store in refrigerator.

1 (17 1/3 ounce) can pillsbury grands ready-to-bake refrigerated buttermilk flaky biscuits
1 (21 ounce) can apple pie filling (or blueberry, cherry, strawberry)
1 -1 1/2 cup whipping cream
cinnamon sugar, for sprinkling

Granddaughter's Fruit Pie image

Steps:

  • Preheat oven to 400 degrees F.
  • For the crust: Place flour and sugar in bowl, cut in shortening. Add fruit juice. Mix until dough forms a ball. Add more juice if necessary. Divide ball into 2 pieces and roll out.
  • For the filling: Combine pineapple, oranges, cherry pie filling, cranberry sauce, sugar, tapioca, cinnamon and lemon juice. Line a 9-inch deep-dish pie plate with half of the rolled out pastry. Add filling, dot with margarine and top with other half of pastry. Make several slits in top crust. Bake 50 to 60 minutes or until crust is golden brown. Remove from oven. Mix together the powdered sugar and lemon and brush glaze on the pie.

3 cups all-purpose flour
2 teaspoons sugar
1 cup shortening
5 tablespoons fruit juice, from pineapple or oranges in filling
1 (15-ounce) can pineapple tidbits, juice reserved
1 (15-ounce) can mandarin oranges, juice reserved
1 (20-ounce) can cherry pie filling
1 (14-ounce) can whole cranberry sauce
1/2 cup sugar
4 tablespoons cooking tapioca
1/2 teaspoon cinnamon
1 teaspoon lemon juice
2 teaspoons margarine
1/2 cup powdered sugar
1 tablespoon lemon juice

APPLE HAND PIES

Apple Hand Pies image

Steps:

  • Line a baking sheet with a silicone mat or parchment paper.
  • Cut peeled and cored apples into quarters, cut each quarter into 3 wedges, and cut wedges into chunks.
  • Melt butter in a large skillet over medium heat; let butter brown to a light golden color and until butter smells toasted, about 1 minute. Stir apples into hot butter; sprinkle with salt, white sugar, and brown sugar. Cook and stir apple mixture until apples are softened, about 5 minutes. Mix in cinnamon and water; continue cooking until apples are soft and sticky, 1 to 2 more minutes. Spread apple filling onto a plate to cool.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Form a dough piece into a ball, place on a floured work surface, and roll into a circle about 8 inches in diameter. Spoon 1/3 to 1/2 cup apple filling in the center. Fold dough over filling, leaving about 1 inch of dough on the bottom side visible below the top side. Gently press dough closed around filling, using your fingertips.
  • Fold the overhanging bottom part of the dough up over the top edge, working your way around the crust, and pinch the overhang tightly to the top part of the crust.
  • Crimp the edge tightly closed, pinching a little bit of dough with the thumb and forefinger of one hand and using your index finger on the other hand to push a small notch into the pinched dough. Continue pinching and notching all the way around until the crust is tightly crimped together. Repeat with remaining dough and filling. Transfer pies onto prepared baking sheet.
  • Whisk egg with milk in a small bowl until thoroughly combined. Brush top of each hand pie with egg mixture and sprinkle with about 1/4 teaspoon white sugar. Cut 3 small vent holes in the top of each pie.
  • Bake in the preheated oven until pies are golden brown and filling is bubbling, 25 to 30 minutes. Let cool for at least 15 minutes before serving.

  • Heat oven to 375°F. Spray 2 cookie sheets with nonstick cooking spray. In small bowl, combine sugar and cinnamon. Set aside.
  • Separate dough into 8 biscuits. Press or roll each to form 5-inch round. Place on sprayed cookie sheets.
  • Place 2 tablespoons pie filling slightly off center on each biscuit round on one cookie sheet. Fold biscuits over filling; press edges with fork to seal. Prick top of each 3 times with fork. Brush each with melted butter; sprinkle with sugar mixture.
  • Bake at 375°F. for 15 to 20 minutes or until deep golden brown. (Some filling may bubble out at edges.) Repeat with biscuit rounds on second cookie sheet. Immediately remove from cookie sheets. Cool 5 minutes before serving. Serve warm.
