CHEESY GREEN BEAN CASSEROLE

It's the perfect blend of old school and new school. Canned cream of mushroom soup and French fried onions ensure there's that classic creamy-crunchy texture contrast. Using frozen green beans, in place of canned, and fresh red bell pepper ensures veggies turn out crisp-tender and not at all mushy. Soy sauce is not detectable as a standalone ingredient, and it's not meant to be. Its role is to enhance the flavor of the entire dish with a spike of umami. And the cheese? That's just there to make sure it all goes down easy!   • Preheat the oven to 325 degrees F (165 degrees C).
  • Fry bacon in a skillet over medium-high heat until crisp. Drain on paper towels, crumble, and set aside. Drain most of the bacon grease from the pan, and place over medium heat. Add the onions and bell pepper; cook and stir until tender. Stir in the wine, scraping all of the bits of bacon from the bottom of the pan.
  • Mix in the butter, milk, soup, and soy sauce. Season with salt and pepper. Stir in the green beans and bacon until evenly coated. Fold in cheese, then transfer to a 9x13 inch baking dish. Sprinkle with French fried onions.

  • Drain and rinse beans (My mother always taught me to do this when using canned green beans, to get rid of the "can taste").

  • Place 3 cans of green beans and one can of sliced mushrooms in a saucepan. Salt and pepper to taste.
  • Heat thoroughly. Drain mixture and place back in saucepan.
  • Stir in 1 jar of Cheese Whiz until desired consistency is achieved. Cheese will be runny but it will solidify when the mixture cools.
