This is a rich, sweet caramel sauce that can be made at the last minute that is great on bread pudding, gingerbread, apple pie, chopped apples, ice cream, and anything else you want to put it on.

EASY MAPLE CARAMEL SAUCE
This maple caramel sauce is so incredibly easy--only two ingredients! I originally made it to drizzle over smoked pork chops but quickly realized it could also be served over ice cream (or your favorite dessert). It's so buttery-smooth and decadent. Yum!

Steps:
- Melt together maple syrup and butter in a small saucepan over medium heat.
- Stirring with a wooden spoon, cook over medium heat for 10-12 minutes until the sauce thickens to the consistency of a smooth caramel sauce. If necessary, whisk to thoroughly incorporate melted butter.
- Remove from heat and allow to cool for 5 minutes. As it cools, a thin skin may form on top. Just stir it once more with your wooden spoon before drizzling over your food of choice.
- Left-overs can be refrigerated and re-heated for 20-30 seconds in the microwave--that is if you have any. :).

- Put the maple syrup into a medium saucepan with a heavy bottom. Fit the pan with a clip on candy thermometer. You'll need a pan tall enough to allow the maple syrup to foam up as it boils. The heavy bottom helps prevent scorching. Most good quality saucepans will work.
- Bring the syrup to a boil and boil until it reaches 225F - 230F, this is just under the softball stage.
- Remove from heat and add the butter, stirring until it melts. Then add the cream and salt and mix in gently. Note: the mixture will be very hot. Do not stir too much, just enough to blend the butter and cream. Too much stirring can cause the mixture to crystallize.
- Pour into a heat safe jar and let cool before refrigerating. It will thicken as it cools, and will thicken further in the refrigerator. This recipe makes just over a cup.
