These classic chicken salad sandwiches are open for interpretation. Depending on your level of prep, you can create them using either home-cooked chicken or a rotisserie chicken from the store. From there, the creativity is all up to you. Make them yours, make them delicious, make them again!

EASY NEW ENGLAND-STYLE CHICKEN SALAD SANDWICH
I got this recipe from an older lady from church, years ago. I loved it because it's easy to make and has a great New England flavor. It;s great for school lunches too!

- 1. Finely chop chicken, onion, egg and celery. Shred lettuce leaves. In bowl, mix all ingredients, except for bread and lettuce. Spread chicken mix evenly between 2 slices of bread, top w/ lettuce, then bread.
MOM'S CHICKEN SALAD SANDWICHES

- In a large mixing bowl, combine mayonnaise, buttermilk, prepared ranch dressing, dry ranch mix and dill weed.
- Gently mix in cooked chicken, almonds, grapes and celery.
- Refrigerate for at least 1 hour and serve on croissants.

- Spread the chicken salad on one of the pieces of bread and place the lettuce on the other piece. Top with desired condiments and bring the two pieces of bread together. Cut in half and place in a reusable container with some fruits and veggies.
