EASY TENDER CHICKEN STOCK
This is so much easier than doing the "old bird" the old way!! and deliciously tender! How it is used is of course up to you, this is what I do: 1. remove chicken, skin it, debone it, use the very tender meat in salads, sandwiches or in any recipe that calls for cooked chicken, it can be frozen for future use. 2. the juice/sauce, should be put in a bowl and in the fridge overnight. The next day, the fat will be on top and can be removed and discarded. the remaining juice will have turned to jelly overnight and can be used as the base for a wonderful "sticky lips" chicken soup, veggie soup etc.,or can be used in any recipe calling for chicken stock. Even watered down, it is better than average. Also can be frozen. Taken apart, used properly with common sense, there is very little chance of it causing a heart attack. Chicken soup is well known as a cure all, spiritual or otherwise. The photos show the "old bird" jelly after refrigeration overnight with the fat risen to the top , then with the fat taken off to show the jelly, then a bowl of soup made from the jelly, the rest of the "old bird" was used for an updated (slimed down) version of chicken and dumplings the remainder frozen for future use. No photo of the old bird in the crock pot, it was quite ugly and turned out fuzzy.

LEMON THYME CHICKEN
Buttered onions are a great addition to this easy lemon chicken recipe. Best of all, it takes only a few minutes to brown the lightly breaded chicken on the stove top. -Kay Shimonek, Corsicana, Texas

CHICKEN STOCK
This recipe for an intense, lovely chicken stock is full of deep flavors and provides a perfect base for soup. Feel free to use leftover bones from roast chicken, but at least half of the bones should be raw. Ask your butcher for feet, heads and wings, which are all high in gelatin and will lend body to the stock. Once cooled, freeze the stock in old 32-ounce yogurt containers, which have the added benefit of being premeasured.

Steps:
- Put everything but the vinegar in a large stockpot. Bring the stock to a boil over high heat, then turn down to a simmer.
- Skim off any foam that rises to the surface. Add the vinegar. (It helps draw out nutrients and minerals from the bones into the stock.)
- Simmer the stock for 6 to 8 hours, covered, keeping an eye on it to make sure it stays at a simmer.
- Strain the stock through a fine-meshed sieve. Let cool.
- Scrape the fat that rises to the top. (Save it in the fridge or freezer for matzoh ball soup.) Refrigerate for up to 5 days, or freeze for up to 3 months.

- Tortellini in Chicken Broth. Think all the cozy comfort of classic chicken noodle soup, with appealing Italian flair, in the form of fat tortellini (use frozen or shelf stable), some grated cheese for richness, a dash of hot sauce if you're feeling spicy, and a handful of watercress — or whatever fresh or frozen greens you have on hand.
- Short Rib and Cauliflower Curry. Short ribs are undoubtedly luxurious. But you could even use stew beef for this rich, deceptively simple curry composed of a shelf stable combo of coconut, curry paste, and chicken broth.
- Instant Pot® Chicken and Dumplings. Besides the chicken broth and chicken, you can feel free to play around with the other ingredients in this dish.
- Baked Brown Rice. Who says brown rice is boring? Toast the grains with butter on the stovetop first, to get them golden and nutty, then fluff them up with a slow simmer in flavorful chicken broth, olive oil, and your choice of spices.
- Chicken Enchilada Slow Cooker Soup. A total fiesta in a bowl, this enchilada "soup" will add a whole new face to taco night. Serve with your favorite taco toppings on the side.
- Onions Baked with Rosemary and Cream. We adore these broth-braised onions entirely as is, although they make a surprisingly versatile addition to your refrigerator.
- Jambalaya. It's everything into the pot, for this New Orleans-style stew of meat and seafood, all cooked together with brothy, Cajun-spiced rice.
- Savory Slow Cooker Green Beans. How slow can you go? If you give these bacon-studded, broth-based beans 8 hours, they'll turn a humble vegetable into a show-stopping side dish.
- Braised Chicken and Artichoke Hearts with Lemon, Cherry Peppers and Thyme. Essentially springtime in a pot, this succulent braise of juicy chicken legs, artichoke hearts and, cherry peppers does double duty as an easy dinner staple, or centerpiece of a holiday table.
- Basic Microwave Risotto. Nothing can dispel the notion of risotto being fussy faster, except the fact that it can be cooked in a microwave. Seriously, no laborious stirring needed — simply heat your chicken broth in a microwave-safe dish, add your arborio rice and (ideally!)
