EASY TOFU BEAN BURRITOS
Steps:
- In a large skillet or saucepan, combine tofu, salsa, beans, chilies, seasoning and optional cilantro and black olives. Bring to a boil. Reduce heat; simmer, uncovered, for 5-10 minutes or until heated through. Spoon about 1/3 cup onto the side of each warmed tortilla; place cheese strip on top. Fold edge of tortilla nearest filling over to cover. Fold ends of tortilla over filling and roll up. Wrap individually in aluminum foil and store in zip-lock freezer bag in freezer. Freeze for up to 2 months. To use: Preheat oven to 350 degrees. Put foil-wrapped burritos on a baking sheet. Bake for 50 minutes or until heated through. If thawed, bake for 25-30 minutes. Microwave directions: Unwrap foil packet. Wrap burrito in paper towel. Microwave each burrito on high for 1-1/2 minutes.

- Preheat oven to 375°. In a large bowl, combine beans, salsa, rice and 1 cup cheese. Spoon about 1/3 cup off-center on each tortilla. Fold the sides and ends over filling and roll up. , Arrange burritos in a greased 13x9-in. baking dish. Sprinkle with remaining 1 cup cheese. Cover and bake until heated through, 20-25 minutes. If desired, topped with lettuce.

- Drain your block of tofu and press it for about 15 minutes (either using a tofu press or following the directions in the notes*). Once pressed, pat dry and break into chunks (I usually do this into a large bowl) about the size of a quarter. When in doubt, I aim for slightly larger than I want as it usually breaks up a bit in the cooking process.
- Assemble the burritos: lay out your 4 tortillas and divide the sofritas evenly among the tortillas. Divide all of the burrito ingredients (guacamole, lettuce, sour cream, tomatoes, etc) evenly among the tortillas, placing everything right in the center.
- Wrap the burritos in tin foil and place them in an air tight container. Freeze and enjoy within a few months.
