EASY WHEAT SOURDOUGH BREAD (ABM)

This recipe goes along with Easy wheat sourdough starter. Directions are included for the sponge and the dough. Good Luck :) Dough is to be mixed in a bread machine.

Easy Wheat Sourdough Bread (Abm) image

Steps:

  • FOR THE SPONGE. (This will make the proofed sourdough starter.).
  • 1 cup starter, 3/4 cup water & 2 cups flour.
  • Mix the starter with the flour & water.
  • Set aside and let sit 4-8 hours or overnight in the refrigerator.
  • Let proceed till it expands 3 times it's original size.
  • FOR THE DOUGH.
  • Add in all ingredients starting from 1 1/4 proofed starter into the bread machine.
  • Let the bread machine mix, kneed and do the first rise.
  • Remove at beep to lightly floured surface.
  • Divide dough into 2 equal portions.
  • Pat each dough portion out into a flat circle.
  • Gently stretch and fold the left side over the middle, then the right over the middle.
  • Like folding a letter.
  • Shape, always keeping the folded side on the bottom.
  • Spray pan with pam & then place shaped dough into pans.
  • Spray the tops and cover with plastic wrap.
  • Refrigerate over night.
  • Take out in the morning and let them finish rising at room temperature.
  • They should be light.
  • Don't rush the rising or your bread will be dense.
  • Bake at 350 until done, about 30 minutes.
  • If your bread is browning too fast, tent with aluminum foil.
  • The bread is done when internal temperature reaches 210.

3 tablespoons powdered milk
1 tablespoon lemon juice
1/4 cup instant potato flakes
1/4 cup white whole wheat flour
3 3/4 cups bread flour
2 tablespoons sugar
3 tablespoons butter (oil is fine)
2 teaspoons salt

Making your own sourdough bread does take a while, but the amount of actual work is minimal--and the bread you'll get is spectacular! See the footnote link to how to make the sourdough starter.

Steps:

  • Measure out starter into a bowl. Add water, salt, and bread flour. Mix until ingredients are well blended into a very sticky dough. Cover with aluminum foil; let rest 4 hours at 70 to 75 degrees F (22 degrees C).
  • With wet hands, fold dough over on itself 3 or 4 times. Cover with foil and allow dough to ferment for 2 more hours.
  • Generously dust a bread form with rice flour (see Chef's Note for banneton substitution).
  • Scrape dough out onto a lightly floured work surface (you can use bread flour or all-purpose flour). Shape into a ball with a smooth, unbroken surface, using just enough flour on the surface to keep it from sticking. Transfer smooth-side down to banneton. Pinch together the rougher edges of the surface toward the center to smooth them and maintain the round ball shape.
  • Cover and refrigerate 12 hours to slow the fermentation process.
  • Remove loaf from the refrigerator and let it rise in a warm spot until the dough springs slowly back and retains a slight indentation when poked gently with a finger, about 3 to 5 hours.
  • Preheat oven to 450 degrees F (230 degrees C). Line a rimmed baking sheet with parchment paper.
  • Dust surface of dough with flour. Gently invert banneton over the baking sheet and transfer dough onto parchment paper. Gently brush off excess rice flour. Score the top of the dough about 1/8-inch deep with a sharp knife to create a shallow slit running across the center. Mist entire surface lightly with water.
  • Bake in the center of preheated oven until beautifully browned, 25 to 30 minutes.
  • Transfer to a rack to cool completely (do not slice loaf while it is still warm).

  • 12 hours before you plan to mix the dough, add the ingredients to make 1/4 cup (50 g) of active sourdough starter to a clean jar. Stir until combined, loosely cover the jar and let the starter rise at room temperature. (The ingredients will create a total of 60 g active starter but some of it will stick to the sides of the jar during the transfer, so we are making a little more than needed.) The sourdough starter is ready to use when it has doubled in size and there are plenty of bubbles on the surface and sides of the jar.
  • Mix the dough: Transfer 50 g of the active starter and 350 g water into a large mixing bowl. Stir to distribute the starter evenly. Add 500 g bread flour and 10 g sea salt to the bowl and use a stiff spatula or your hands to work the ingredients together until it forms a shaggy mass and there are no dry bits of flour left in the bowl. Cover the bowl and let the dough rest for one hour at room temperature.

  • Whole whether doughs tend to rise faster than white doughs, especially in warm weather. To avoid over proofed dough, I like to start mixing in the afternoon (usually between 2-3 PM) when I know I’ll be home to stretch and fold the dough. Please adjust your rise times based on temperature.
  • Combine the sourdough starter and water in a large bowl. Add the flour and salt. Mix with a fork and then finish by hand to fully incorporate the flour. It will feel very wet and sticky. Cover with a damp towel or wrap and let rest for 1 hour on your countertop, returning to the bowl after the first 30 minutes to work the dough into a rough ball.
  • The following morning, make sure the dough has doubled in size. If not, give it more time to bulk up, if needed. This is important to build strength.
