EAT-SOME-MORE DANISH TEA CAKE

This recipe has been posted for ZWT II & my source is my "Classic Scandanavian Cooking" cookbook by Nika Hazelton. Per the intro, "From Mrs. Arne Christiansen, who lived in America but cooked in the best Danish manner. This cake is quick & easy to make."

Steps:

  • Set oven at 350°F Cream together butter & confectioner's sugar till mixture is fluffy.
  • Beat in eggs 1 at a time. Stir in lemon rind.
  • Sift flour w/baking powder. Add flour to batter, alternately w/milk.
  • Spread batter in buttered & floured 9-in square baking pan. Arrange apple slices on top of batter in overlapping rows.
  • Sprinkle w/almonds. Sprinkle w/sugar in an amt that depends on the sweetness of the apples you have used.
  • Bake 50 min or till cake tests done. Serve w/sweetened whipped cream.

1/2 cup butter
1 cup confectioners' sugar
2 eggs
1 lemon, zest of, only, grated
2 cups flour (sifted)
2 teaspoons baking powder
1/4 cup milk
3 apples (peeled & thinly sliced)
2/3 cup blanched almond (chopped)
granulated sugar (as sweetness of apples dictates)

Dromtarta - Swedish Chocolate Dream Cake image

Steps:

  • Preheat oven to 350°F.
  • Cake:.
  • Sift together the flour, cocoa, baking powder, salt and baking soda.
  • Combine eggs, water and vanilla and beat until thick and lemon-colored. Add granulated sugar gradually (1 tbsp at a time) and beat thoroughly after each addition.
  • Slowly sift flour mixture into egg mixture and fold in carefully, but thoroughly.
  • Grease a 15x10 in jelly-roll pan and line w/waxed paper. Spread batter evenly in pan and bake 30 minutes or till cake tests done. Touch cake lightly w/fingertip. If the dough springs back quickly, the cake is done.
  • Sprinkle a kitchen towel heavily with confectioner's sugar . Turn cake onto kitchen towel and peel off waxed paper. Trim off any crisp edges. Roll warm cake lengthwise in towel into a roll. Cool on rack, seam side down.
  • Filling - Cream butter with egg yolk and cocoa. Beat in sugar gradually, alternating w/rum. Keep at room temp for spreading.
  • Cake Assembly - Unroll cake and spread with filling. Reroll and refrigerate till serving time.

GRANDMA'S OLD FASHIONED TEA CAKES

A soft teacake that is best when one to two days old. You can change flavors by substituting almond or lemon extract for the vanilla. Add a few drop of food coloring to dress up the dough for special occasions.

Grandma's Old Fashioned Tea Cakes image

Steps:

  • In a medium bowl, cream together the butter and sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking soda, salt and nutmeg; stir into the creamed mixture. Knead dough for a few turnns on a floured board until smooth. Cover and refrigerate until firm.
  • Preheat the oven to 325 degrees F (165 degrees C). On a lightly floured surface, roll the dough out to 1/4 inch in thickness. Cut into desired shapes with cookie cutters. Place cookies 1 1/2 inches apart onto cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

CRANBERRY TEA CAKE

This was originally from the "Moosewood Sundays" cookbook and was an instant hit around here...part coffeecake, part dessert - yummy! I've never had almonds in the house, but can vouch that it's great even without them. I've added in a bit of orange rind to the cranberry mix before too, to give it a nice zing. I have always used a Bundt pan...makes for a very pretty presentation for breakfast, brunch, tea, dessert, or gifts, especially around the winter holidays.

Cranberry Tea Cake image

Steps:

  • Coarsely chop cranberries.
  • Combine cranberries with brown sugar, almonds, cinnamon and nutmeg; set to the side.
  • Cream butter and sugar.
  • Add vanilla, sour cream, and eggs; mix thoroughly.
  • Sift together flour, baking soda, baking powder, and salt.
  • Stir into egg mixture just until moistened.
  • Pour 1/2 of batter into greased Bundt pan or 8" round cake pan.
  • Spread 1/2 of cranberry mixture over the top.
  • Repeat with remaining batter and cranberries.
  • Bake 50-60 min at 350.
  • Remove from pan and cool on rack.
  • Dust with powdered sugar.
