ELEGANT EGGNOG DESSERT
This impressive dessert has become so popular that I have to make three every year-one for my husband to take to work, one for our family on Christmas Eve and one for his family Christmas Day! Any flavor of Pirouette cookies can be used, and vanilla can be substituted for the rum flavoring. -Lisa Scanio, Tampa, Florida

Steps:
- Cut each cookie into two 2-1/2-in. sections; set aside. Crush remaining 1-inch pieces. In a small bowl, combine the cookie crumbs, cracker crumbs and butter; press onto the bottom of a greased 9-in. springform pan., In a large bowl, beat the cream cheese until smooth. Beat in the eggnog, milk, dry pudding mixes, extract and nutmeg until smooth. Whip cream until stiff peaks form. Fold whipped cream into pudding mixture. Spoon over crust. Cover and refrigerate for 6 hours or overnight. , Just before serving, remove sides of pan. Arrange reserved cookies around dessert and press gently into sides. Refrigerate leftovers.

CLASSIC EGGNOG
Once you taste homemade eggnog, you'll never go back to the stuff in the carton. This is our go-to version for the holiday season. It's festive and decadent, laced with nutmeg and vanilla. We lightened it up by folding in whipped cream and made the booze optional so that it's good for young and old alike.

- Whisk the eggs, egg yolk and sugar in a bowl until combined. Heat the milk and 1/2 cup heavy cream in a medium saucepan over medium heat until steaming; do not boil. Remove from the heat. Whisk 1 cup of the hot milk mixture into the egg mixture, then whisk the egg mixture back into the saucepan. Cook over medium heat, stirring constantly with a wooden spoon, until the mixture is thick enough to coat the back of the spoon and a thermometer registers 165 degrees F, about 5 minutes. (Do not boil or the eggs will curdle.)
- Strain the mixture through a fine-mesh sieve into a large bowl and stir in the vanilla and nutmeg. Let cool at room temperature, about 1 hour. Cover and refrigerate until cold, at least 2 hours or up to 1 week.
- Whisk the remaining 1/2 cup heavy cream in a large bowl until stiff peaks form. Slowly whisk the whipped cream into the chilled eggnog mixture, then whisk in the rum. Pour into glasses, sprinkle with nutmeg and serve with cinnamon sticks.

Wow, this is one of my favorite recipes that I have found so far. It is so beautiful and yet super easy to make too. What a wonderful dessert to take to a holiday party at Christmas time or even at Thanksgiving. ----- A cross between a cream pie and cheesecake. - 1. (SET OUT THE CREAM CHEESE TO ROOM TEMP) Cut each cookie into two 2-1/2 or 3 inch sections; set aside. Crush remaining 1-inch pieces. In a small bowl, combine the cookie crumbs, cracker crumbs and butter.
- 2. Press onto the bottom of a greased 9-in. spring-form pan.
- 3. In a large bowl, beat the cream cheese until smooth. Beat in the eggnog, milk, dry pudding mixes, extract and nutmeg until smooth. Whip cream until stiff peaks form. Fold whipped cream into pudding mixture. Spoon over crust. (Make sure you use a VERY LARGE bowl.)
- 4. Cover and refrigerate for 4-6 hours or overnight. Just before serving, remove sides of pan. Arrange reserved cookies around dessert and press gently into sides. --- (Can do this 1/2 to 1 hr before serving.)
- 5. Refrigerate leftovers. Yield: 12 servings. ----Do not use reduced fat eggnog in this recipe.
AMAZINGLY GOOD EGGNOG
It's taken me several years to perfect this homemade eggnog recipe. Now everyone asks, 'When are you making the eggnog?!' This uses cooked eggs for safety, and you can use more or less rum to taste. It's a bit of work to make, but well worth it. You'll never buy store-bought eggnog again! Enjoy!

Steps:
- Combine milk, cloves, 1/2 teaspoon vanilla, and cinnamon in a saucepan, and heat over lowest setting for 5 minutes. Slowly bring milk mixture to a boil.
- In a large bowl, combine egg yolks and sugar. Whisk together until fluffy. Whisk hot milk mixture slowly into the eggs. Pour mixture into saucepan. Cook over medium heat, stirring constantly for 3 minutes, or until thick. Do not allow mixture to boil. Strain to remove cloves, and let cool for about 1 hour.
- Stir in rum, cream, 2 teaspoon vanilla, and nutmeg. Refrigerate for 8 hours, or overnight, before serving.

I found this recipe in the Dec/Jan 08 edition of Taste of Home magazine. I haven't made it yet but it looks really good. I'm storing it here for safe-keeping. The cook time is actually chilling time.

- Cut 20 cookies into three (3) 2" sections and set aside. Crush remaining cookies.
- In a small bowl, combine the cookie crumbs with the graham cracker crumbs and melted butter.
- Press onto the bottom of a 9" springform pan.
- In large mixing bowl, beat the cream cheese until smooth.
- Beat in the eggnog, milk, pudding mixes, rum extract and nutmeg until smooth.
- Fold in the whipping cream (be sure to whip first).
- Pour over crust, cover and refrigerate at least 4 hours, or overnight.
- Just before serving, remove sides of pan.
- Arrange reserved cookes around dessert (standing up) and gently press into sides.
- Refrigerate leftovers.
- Cooking time is actually chilling time.

Requesting sugar-free eggnog?...well here is a wonderful recipe for a sugar and alcohol free eggnog and is made with Splenda. I am sure you could use any brand of sweetener that you like. - 1. Mix together first 3 ingredients in a large heavy saucepan. Set aside. Whisk egg yolks. Add to SPLENDA Granulated Sweetener mixture whisking until blended. Gradually whisk in milk.
- 2. Cook over low heat, whisking constantly until the temperature reaches 175 degrees approximately; after about 8 minutes I turned up the heat some to get it to the temp. I needed. (12 to 15 minutes). Remove from heat and whisk in half and half; cool.
- 3. Cover and chill 3 hours or up to 3 days. Stir in vanilla & rum extract just before serving.

- Beat the egg yolks until thick and pale yellow in a medium-size bowl with a mixer set to high speed. Gradually add ⅓ cup sugar and continue beating until the sugar dissolves.
- Stir together the milk, 1 cup cream, and ½ teaspoon nutmeg in a small saucepan. Bring just to a simmer over medium heat. Whisking constantly, add the warm milk mixture to egg yolk mixture in a slow, steady stream. Pour into the saucepan and cook over medium heat, stirring constantly with a heat-proof spatula until the mixture thickens slightly and reaches 160°F. Pour into a bowl. Stir in the liquor, if using. Cover and refrigerate until chilled.
- Just before serving, beat the egg whites to soft peaks in a medium-size bowl with a mixer set to high speed. Add the remaining 1 tablespoon sugar and beat to firm peaks. Fold into the chilled base mixture.
- Beat the remaining 1 cup cream to stiff peaks, and then fold into eggnog. (Alternatively, fold half the whipped cream into the chilled base and spoon the rest on top as garnish.)
