How to make Excellent Steak Diane

Steps:
- Put 4 sirloin steaks, each about 6 ounces, between pieces of waxed paper and pound to a 1/3\" thickness.
- In small saucepan, heat 2 tablespoons butter.
- Add 4 tablespoons finely chopped shallots and cook until shallots are lightly browned.
- Add 2 tablespoons worcestershire sauce and heat to bubbling.
- Keep the sauce hot.
- Heat 6 tablespoons of butter in a 12\" skillet or chafing dish.
- When it begins to brown, add steaks and cook for 3 minutes.
- Turn and cook for 2 to 3 minutes longer or until done to taste.
- Transfer to a serving dish and sprinkle with salt and a generous amount of freshly ground pepper.
- Presentation:
- Spread the shallot sauce over the steaks and sprinkle with chopped parsley.

- 1. Cut steak into thin strips. In a large skillet brown steak in oil over high heat. Add onions. Saute until tender crisp. Blend soup, sherry, liquid from mushrooms and garlic salt. Pour over steak. Add mushrooms. Reduce heat, cover and simmer for 1 hour or till steak is tender. (or cover and bake at 350) Serve over beds of fluffy rice.

- Cooking day:.Place the meat in a large freezer bag.
- In a separate bowl, mix together remaining ingredients and pour over meat.
- If freezing, place freezer bag into freezer, keeping as flat as possible.
- Serving day:.Thaw steak.
- Place meat and marinade into crockpot. Simmer on low for about 5-6 hours or until tender.
- Remove meat and thinly slice. Place meat on a serving platter; pour juices from crockpot over meat and serve.
- This is great served over noodles, rice, or garlic mashed potatoes. The wine dissipates while cooking but tenderizes the meat and gives it a wonderful, rich flavor.
