VENISON VEGETABLE STEW

Venison Vegetable Stew image

Steps:

  • In a 4-qt. Dutch oven, cook bacon until crisp. Remove to a paper towel to drain; reserve drippings in pan. Crumble bacon and set aside. Cook venison and onions in drippings until meat is lightly browned. Add 3 cups water, tomato sauce, soup mix, salt, bay leaf and Italian seasoning; bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours or until meat is almost tender. , Add the carrots, potatoes and celery; return to a boil. Reduce heat; cover and simmer 30-45 minutes or until meat and vegetables are tender. , Combine flour and remaining water until smooth; stir into stew. Bring to a boil; cook and stir until slightly thickened. Stir in bacon. Discard bay leaf. Serve with cooked noodles.

2 pounds venison stew meat, cut into 1-inch cubes
2 large onions, chopped
3-1/2 cups water, divided
1 can (8 ounces) tomato sauce
1 envelope onion soup mix
2 teaspoons salt
1 bay leaf
2 teaspoons Italian seasoning
7 medium carrots, cut into 1-inch pieces
5 medium potaotes, peeled and cut into 1-inch cubes
4 celery ribs, sliced
3 tablespoons all-purpose flour
Cooked noodles

ELK VEGTABLE STEW

Craving Beef Stew and all I had was Elk and Venison in my freezer thanks to my brother...So made some Elk Stew! I don't have a recipe, I just throw things together until they look, smell and taste good. I wrote down amounts as I went, hoping I didn't forget anything :~/ I made a focaccia bread recipe off of here too, I will link to this in the comment section...its smellin so good in here!!! mmmmm I hope you enjoy it!

Steps:

  • Put flour, seasoning salt, garlic powder and onion powder into a gallon zip lock bag, shake it up to mix...add your 1" cubes of meat. Zip the bag shut with lots of air inside...and shake it up making sure to coat all sides of each piece of meat. Set aside with meat still in bag.
  • In a 6qt dutch oven kettle, heat the vegtable oil, while its heating give your meat a couple good shakes again to coat all pieces again. When oil is hot, lift meat out of bag, shaking excess flour off and drop into kettle. Stirring occsionally.
  • When the meat is brown on all sides add onions and celery...continue to saute until onions are nearly translucent. Then add broth or warm water with beef base stirring until mixed well. Then add carrots, potatoes, and squash...bring to a low boil and simmer over low heat stirring occasionally for 20 minutes.
  • then add cabbage, thyme and paprika, if desired. Stirring well. Cover and simmer over low heat for 30 min. or so, until cabbage is tender.

1/2 - head of a small cabbage, rough chopped
1-3 teaspoon(s) smoked paprika, if desired
1 tablespoon(s) thyme, dried

Simple and versatile stew. This is the 'base' recipe I use and add or change to whatever I have on hand.

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Heat bacon grease in an oven-proof pot or Dutch oven over medium heat. Cook and stir venison in the hot grease until browned on all sides, about 5 minutes. Transfer venison to a plate using a slotted spoon. Add onion to hot grease; cook and stir until tender, 4 to 5 minutes.
  • Mix garlic, tomato paste, and anchovy paste together in a small bowl; add to onions. Stir flour into onion mixture until dissolved.
  • Pour wine, beef broth, and chicken broth into the pot; bring to a boil while scraping the browned bits of food off of the bottom of the pot with a wooden spoon. Add thyme and bay leaves to pot and bring liquid to a simmer. Return venison to pot. Cover pot.
  • Simmer stew in the preheated oven for 1 hour. Add potatoes, carrots, and mushrooms to stew and simmer in the oven until potatoes are tender, about 1 hour more. Add peas and stir.

Steps:

  • Melt margarine in a Dutch oven.
  • Brown meat on all sides.
  • Add mushrooms and onions, sautéing until barely browned.
  • Add beef stock, vegetables, garlic, brown sugar, salt, and pepper.
  • Simmer slowly until everything is very tender, adding water to keep juice covering stew.
  • When done, add flour to small bowl and enough water to make a smooth paste.
  • Then add enough water to make the paste thin enough to pour.
  • Pour into stew, while gently stirring.
  • Heat enough to thicken the gravy and serve.

  • In a Dutch oven, heat oil over medium heat. Brown meat on all sides. Remove from pan. Add onions to the same pan; cook and stir until crisp-tender, 5-7 minutes. Add garlic; cook and stir 1 minute longer. Add water, stirring to loosen browned bits from pan. Stir in Worcestershire sauce, bay leaf, oregano, salt, pepper. Return meat to pan; bring to a boil. Reduce heat; cover and simmer until meat is tender, 1-1/2 to 2 hours., Add potatoes and carrots. Continue to cook until vegetables are tender, 30-45 minutes. Remove and discard bay leaf.   • Prep Work. For each vegetable listed above, wash it and prep it before you start cooking so that you’re always ready for the next step. Nothing’s worse than scrambling to dice an onion when you’re supposed to be moving to the next phase of a recipe.
  • Browning the Elk Stew Meat. Grab your prepped meat and toss it into your pre-heated cooking device. The goal here is to get a nice brown across all the little nuggets of stew meat in your pressure cooker or skillet.
  • Add Your Veggies (Except Potatoes) and Spices. Drop your onion, shallots, celery, garlic, salt carrots, peppery cayenne, red pepper, and herbs de province into the instant pot or the skillet.
  • Spill the Wine. Pour your red wine into the instant pot insert or skillet and deglaze the pot with the vegetables still inside. Use a wooden spoon to scrape any of the brown bits off the bottom of your skillet or instant pot.
  • Combine Everything and Cook. Add your browned elk stew meat, vegetable broth, and tomato paste into the instant pot and give it a good stir. Use the manual pressure cook function to set your cook time to 15 minutes, then let the pressure cooker naturally release for 5 minutes.
  • The Final Touches. After you’ve released any remaining pressure from the pressure cooker, add your potatoes and rest the rosemary sprigs at the top of the pot.
