EMERALD ISLE LAMB CHOPS

Emerald Isle Lamb Chops image

Steps:

  • 1. In a small bowl, combine 1 Tablespoon oil, mustard, whiskey, rosemary and garlic to form a paste. Season lamb chops with salt and pepper; spread paste over both sides. Cover and marinate at room temperature for 30 minutes, or refrigerate 2 to 3 hours.
  • 2. Heat remaining 1 Tablespoon oil in large skillet over medium-high heat. Add lamb chops in a single layer; cook 2 to 3 minutes per side or until desired doneness. Remove to serving plate and keep warm.
  • 3. Drain excess fat from skillet. Add wine; cook and stir about 5 minutes, scraping up browned bits from bottom of skillet. Stir in jam until well blended. Remove from heat; stir in butter until melted. Serve sauce over lamb chops.

2 Tbsp vegetable or olive oil, divided
2 Tbsp coarse dijon mustard
1 Tbsp irish whiskey
1 Tbsp minced fresh rosemary
2 tsp minced garlic
1-1/2 lb loin lamb chops (about 6 chops)
1/2 tsp salt
1/2 tsp black pepper
3/4 c dry white wine
2 Tbsp black currant jam
1 to 2 Tbsp butter, cut into pieces

This solo supper of pan-seared chops gets a quick boost from a garlicky coating. Speedy spinach and a squeeze of citrus complete the meal.

Lamb Chops with Garlic-Parsley Crust and Sauteed Spinach image

Steps:

  • In a medium bowl, combine breadcrumbs, parsley, garlic, lemon zest, and 1 teaspoon oil; season with salt and pepper. Dividing evenly, press breadcrumb mixture firmly on one side of each lamb chop.
  • In a medium skillet, heat remaining teaspoon oil over medium. Place chops in skillet, crumb side down; season with salt and pepper. Cook until crust is browned, 3 to 4 minutes; turn, and cook 4 to 6 minutes more for medium-rare. Transfer to a plate (reserve skillet), and cover loosely with aluminum foil to keep warm.
  • Add spinach to skillet; season with salt and pepper. Cook, tossing, until wilted, 1 to 3 minutes. Serve lamb with spinach and lemon wedge.

Rosemary-and-Garlic Lamb Chops image

Steps:

  • Season lamb with salt and pepper. Heat a large straight-sided skillet over medium-high. Add oil, then lamb in a single layer. Cook, flipping once, until browned on both sides, 5 to 7 minutes. Transfer to a plate.
  • Reduce heat to medium. Add onions; cook, stirring a few times, until golden brown in places, 5 to 7 minutes. Add garlic, rosemary, and tomato paste; cook until fragrant, about 1 minute. Add wine; cook until mostly evaporated, about 1 minute. Stir in broth. Return lamb and any juices to pan; bring to a simmer. Partially cover, reduce heat to low, and cook until a thermometer inserted in thickest part of lamb (without touching bone) registers 130 degrees, 6 to 8 minutes. Serve over potatoes.

4 lamb-shoulder chops (6 to 8 ounces each), trimmed of excess fat
Coarse salt and freshly ground pepper
2 tablespoons extra-virgin olive oil
10 ounces frozen pearl onions, thawed, drained, and patted dry
2 tablespoons minced garlic (from 4 to 5 cloves)
3 sprigs rosemary
2 tablespoons tomato paste
1/2 cup dry red wine, such as Cabernet Sauvignon
1 1/2 cups low-sodium chicken broth
Mashed potatoes, for serving
