BEST POTATO KUGEL EVER
Once you try this recipe, you will never want any other one! This is my mothers recipe and every Shabbos, our neighbors stop by for their special Shabbos treat!

Steps:
- Preheat oven to 350°F.
- Pour oil into a 9x13 inch pan.
- Peel and wash potatoes well.
- Hand grate the potatoes and onion (you can use a food processor, but we like how it tastes better when it is hand grated).
- Add the eggs and seasonings and mix well.
- Pour in most of the hot oil and mix.
- Pour potato mixture into hot pan.
- Bake at 350 F for 1-1/2 to 2 hours. (Depending if you like it mushy or well done--bake longer if you like well done).
SLOW COOK POTATO KUGEL (GLUTEN FREE!)
Potato Kugel is always better the longer you bake it! So keep it in that oven!!! A good tip for potato kugel, is always to use a food processor - otherwise you end up with a gooey grey mess - and I don't know anyone that actually likes grey potato kugel! Keep a bowl of cold water on had for your peeled potatoes as well, to keep them that much whiter!

Steps:
- Preheat oven to 420°F.
- Take your baking trays - 2 medium rectangle - and place the oil in them and swirl around a bit. Then place them in the oven to heat.
- Peel all your potatoes and place them in to your bowl of cold water.
- In a seperate bowl, place your eggs, oil, salt, pepper and garlic. Beat together till combined.
- Get out your food processor and using the smallest grater setting, grate the onions and potatoes.
- Immediately add to the liquid.
- Mix together thoroughly.
- Take baking trays out of the oven - CAREFULLY!
- Pour any excess oil in to the grated potatoes.
- Place grated potatoes in to the baking tray, without squeezing out any of the liquid.
- Pour liquid that is left in the bowl over the potatoes and place in the oven.
- Bake on 420f for 30 minutes then turn down to 200f. Leave in for 5-7 hours.

SWEET POTATO KUGEL
You could add cinnamon, maple syrup, what have you. I got this off the internet somewhere - it has been much requested.

- Beat well and put in greased casserole. Dot with margarine.

ONION MUSHROOM POTATO KUGEL

Steps:
- Place potatoes in a large pot and cover with salted water.
- Bring to a boil, then cover and simmer for 35 minutes or until very tender.
- Drain and cool slightly.
- Preheat oven to 350°F
- Heat oil in a large skillet.
- Saute onions over medium heat approximately 7 minutes or until lightly browned.
- Add mushrooms and saute until browned.
- While onions and mushrooms are cooking, cut potatoes into large pieces and roughly mash.
- Stir broth in with potatoes, then add beaten eggs.
- Stir in 1/2 cup mushroom onion mixture, salt and pepper.
- Spoon half of the potato mixture into a 8 x 8 square casserole dish sprayed with cooking spray.
- Top with remaining mushroom onion mixture, then with remaining potato.
- Smooth top of potatoes and sprinkle with paprika.
- Bake uncovered for 50 minutes or until top is firm and light golden at edges.

SHALOM BAYIT KUGEL (POTATO KUGEL)
This is called shalom bayit (peace in the home) kugel, because that is precisely the effect it has on mine when I make it on Friday afternoon. This is a recipe for either 2 large kugels (9"x13" and deep) or 4 small kugels (@8-9" square). It is best straight out of the oven, but can be saved for lunch the next day. To further its shalom bayit potential, I usually make it into four small kugels: one to feed my underfed, stressed out family on Friday afternoon (we always seem to forget real meals while we are preparing for Shabbat), another one for Friday night, another for Shabbat day, and, equally important, the fourth to give to some other family which is either running late, stressed out, just had a baby, or needs a pick-me-up. Never fails to work wonders. The key to this kugel is baking it first at a high temperature for a short time, and then at a lower temp. Wishing your family a peaceful day.

Steps:
- Preheat oven to 500F (yes, 500F!).
- Grate the potatoes and onions on the middle sized hole of a grater; either by hand or by food processor.
- If you grate the potatoes and onions together, the potatoes will not turn grey right away.
- Put into a large bowl or soup pot, and mix well with remaining ingredients.
- Grease your baking pans, and pour mixture evenly into the pans.
- Bake for 15 minutes at 500F, then lower the oven to 400F until done (check after an hour or so; it should be golden brown on top).
- Eat and enjoy.

- Crack eggs into bowl of food processor, fitted with grinding blade.
- Grate onion, potatoes and zucchini directly into eggs.
