CHEWY CHOCOLATE CHIP OATMEAL COOKIES
I modified Beatrice's Excellent Oatmeal cookies very slightly. I came up with something that my boyfriend went CRAZY over! I've never seen him enjoy cookies to that extent! He said I blew his mother's recipe away.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C).
- In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in eggs one at a time, then stir in vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended. Mix in the quick oats, walnuts, and chocolate chips. Drop by heaping spoonfuls onto ungreased baking sheets.
- Bake for 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

EVERYDAY OATMEAL COOKIES
This oatmeal cookie recipe is one of my favorites. Easy to make in a jiffy. I make them larger and wrap in cello with some decorations and a nice ribbon for a little gift to take to a friend.

Steps:
- Preheat oven to 325 degrees.
- Beat butter, white sugar and brown sugar until creamed in a large bowl.
- Beat in the eggs, one at the time, then add the vanilla.
- In a medium-sized bowl, combine flour, salt, baking soda, nutmeg and cinnamon.
- Add to the butter-sugar mix and combine well.
- Stir in the oatmeal, raisins and pecans until well combined.
- Drop by a heaping tablespoon 2 inches apart onto ungreased cookie sheet, and flatten with a floured fork.
- Bake 10 minutes or until golden brown without burning them. Cool slightly on cookie sheet until set, then cool on a wire rack.

MRS. CARLSON'S EVERYDAY COOKIES
This recipe comes from a wonderful lady who lived down the street from me when I was growing up. She went to our church so I often saw her. My family lived on a cul-de-sac and I remember my sisters and I traveling down to visit her. Her children were long since grown and I think she appreciated the visits as much as we kids did. She would feed us these cookies and fortunately she passed the recipe to my mother. It's been more than twenty years since we lived on that street. However, we still see Ms. Carlson at church. She was there to see my older sister married and the baptism of our family's first grandchild. She is now in her late 80's and I fear time is short. Yet I hope that perhaps a new generation will appreciate the cookies she set out with care for her special guests, the three sisters from up the road. I hope you enjoy them as much as I did/do.

Steps:
- Mix all ingredients together.
- Chill dough for 1 hour.
- Roll dough into a ball (desired size of cookie).
- Flatten with the bottom of a glass dipped in granulated sugar.
- Sprinkle cookies with desired color of sugar depending on season.
- Bake at 350 degrees for 10-12 minutes.

This is a light, melt- in- your- mouth cookie. I immediately asked for recipe after tasting it. If you take it to a gathering , someone will ask you for the recipe. The recipe originally came from The Chicago Tribune newspaper many years ago.

Steps:
- Beat butter and sugars with electric mixer till fluffy.
- Add oil and egg, mix well.
- Add flour with soda, salt and cream of tartar.
- Add oatmeal, coconut and rice Krispeis, mix by hand.
- Drop by rounded tablespoon on greased cookie sheet (I use small cookie scoop).
- Use fork dipped in water to flatten slightly.
- Bake at 350 degrees until light brown, about 13-14 minutes.
- Using small cookie scoop, this makes about 107 cookies.
