NO-BAKE RAISIN BRAN BREAKFAST BARS

No-Bake Raisin Bran Breakfast Bars image

Steps:

  • Butter square pan, 8x8x2 inches. Heat brown sugar and corn syrup just to boiling in 3-quart saucepan over medium heat, stirring frequently. Remove from heat; stir in peanut butter and cinnamon until smooth.
  • Stir in cereal and peanuts or almonds until evenly coated. Press firmly in pan. Let stand about 1 hour or until set. Cut into 4 rows by 3 rows. Store loosely covered at room temperature.

Extreme Low-Fat Buttermilk-Bran Breakfast Squares image

Steps:

  • Set oven to 350°F.
  • Grease an 8 x 8-inch baking pan.
  • In a small heat-proof bowl mix together the 1/2 cup All Bran cereal with boiling water; let stand until softened.
  • In a large bowl mix/whisk egg (or egg substitute) buttermilk, sugar and applesauce; add in the softened bran/water mixture to the egg mixture.
  • In a bowl mix together both flours, baking soda and salt; add to the wet mixture; mix only just until combined.
  • Stir in the 1 cup Bran Buds or 100% Bran cereal with a wooden spoon.
  • Transfer the mixture to prepared baking pan.
  • Bake for 45-50 minutes or until the bars test done.

Steps:

  • In a small bowl, combine All-Bran and 1 cup buttermilk; let stand for 5 minutes. Stir in raisin bran; let stand 5 minutes longer. , Meanwhile, in a large bowl, combine the flour, sugar, sugar blend, brown sugar, baking powder, baking soda and salt. In another bowl, combine the egg, egg whites, applesauce, oil and remaining buttermilk. Stir into dry ingredients just until moistened. Stir in bran mixture. , Coat muffin cups with cooking spray; fill three-fourths full with batter. Bake at 375° for 15-20 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks.
