FABULOUS FROSTED FRENCH TOAST
Warm French toast topped with a cream cheese frosting. This is a reduced-fat version of what my sister serves for breakfast whenever they have company. It is incredible!

- In a medium bowl, whisk together the eggs, milk, 2 tablespoons of sugar, and cinnamon. Melt one tablespoon of butter in a large skillet over medium heat. Dip a few bread slices into the egg mixture just to coat. Place in the hot skillet, and cook until golden on each side, about 4 minutes per side. Repeat with remaining slices of bread. Melt 1 tablespoon of butter in the skillet before frying each batch of toast.
- While the toast is cooking, mix cream cheese, 2 tablespoons of sugar, sour cream, and whipped topping using an electric mixer or blender until smooth, yet firm.
- Place servings of warm French toast onto plates, and top with a generous dollop of the frosting.

- In a large bowl, dissolve yeast and 1/2 teaspoon sugar in warm water; let stand until bubbles form on surface. Whisk together remaining 3 tablespoons sugar, salt and 3 cups flour. Stir oil into yeast mixture; pour into flour mixture and beat until smooth. Stir in enough remaining flour, 1/2 cup at a time, to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 8-10 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, 1-1/2 to 2 hours., Punch dough down. Turn onto a lightly floured surface; divide dough in half. Shape each into a loaf. Place in 2 greased 9x5-in. loaf pans. Cover and let rise until doubled, 1 to 1-1/2 hours., Bake at 375° until golden brown and bread sounds hollow when tapped or has reached an internal temperature of 200°, 30-35 minutes. Remove from pans to wire racks to cool.

FABULOUS FRENCH BREAD
Delicious and warm, crusty and suprisingly easy -- this recipe will quickly become a staple around your kitchen. This French Bread recipe can be converted into Garlic Bread to accompany any Italian dish, sliced up for an A.M. treat of French Toast, or just enjoyed with your favorite soup or bisque.

Steps:
- Into a large warm mixing bowl, pour warm water, then stir in sugar, salt, oil, and half of the flour and yeast.
- Beat vigorously for 2 or 3 minutes.
- Stir in remaining flour until all dry ingredients are completely mixed inches.
- Let your dough mixer or machine kneed the dough for a further 8 minutes to really get the gluten working in the flour to create a softer bread.
- Once the mixing is done, transfer dough to a greased bowl and cover with a dough towel or plastic wrap.
- Let the dough rest for 20 minutes. (Time this.)
- At the end of the 20 minutes, punch the dough down; two punches should do it.
- Then set the time again for 10 minutes; at the end of the 10 minutes, punch the dough down again.
- Repeat the ten minute intervals five times.
- After the 5th time of punching down the dough, turn the dough onto a floured board; knead only enough to coat dough with enough flour so that it can be handled.
- Divide the dough into 2 parts.
- Roll each part of dough into a rectangle about 4 x 12 inches and roll up like a jelly roll, rolling from the long side.
- Pinch end to seal.
- Arrange on a cookie sheet sprayed with Pam spray and sprinkled with cornmeal.
- Allow the two loaves to rise for a further 30 minutes.
- With a very sharp knife, cut 4 gashes at an angle on top, then brush with beaten whole egg.
- If desired, sprinkle with sesame or poppy seeds.
- Bake immediately at 400 degrees for 25 minutes or until light to medium brown.
- Remove from baking sheets immediately and cool.

Steps:
- Pour warm water into a large, warm mixing bowl.
- Stir in sugar, salt, oil, 3 cups of flour, and yeast.
- Beat vigorously for 2-3 minutes.
- Stir in remaining flour until all dry ingredients are incorporated, leaving spoon right in batter.
- Allow dough to rest 10 minutes; then stir down.
- Allow dough to rest another 10 minutes and stir down again.
- Repeat this process until dough has been stirred down 5 times.
- Turn dough onto floured surface.
- Knead only enough to coat the dough with flour so it can be handled.
- Divide dough into 2 parts.
- Roll each half into a rectangle approximately 9x12 inches, and roll up like a jelly roll starting from the long side.
- Pinch ends to seal.
- Arrange on a large baking sheet that has been dusted with cornmeal, leaving enough room for both loaves.
- Cover lightly and let rise at room temperature for 30 minutes.
- With a very sharp knife, cut 3 diagonal slashes on top of each loaf.
- Brush each loaf with beaten egg.
- Bake immediately at 400°F for 20-30 minutes or until golden brown.
- Remove from baking sheet and cool on wire racks.
- *NOTE: I have used my Kitchenaid mixer to do all the mixing and it works great either way.

- In the mixing bowl of a stand mixer using the flat beater, combine the yeast, 2 1/2 cups flour and salt. Mix on low for about 30 seconds.
- With the motor running on low, pour in the warm water. Continue mixing until a shaggy dough forms. Clean off beater and switch to the dough hook. Mix in the remaining cup of flour a little at a time, to make a soft dough, adding more or less flour as needed. Knead the dough for 5 minutes. The surface should be smooth and the dough will be soft and somewhat sticky.
- Turn the dough onto a kneading surface and let rest for 2 - 3 minutes while you wash and dry the bowl and spray it with non-stick spray.
- Return the dough to the mixing bowl and let it rise, covered, at room temperature (about 75º) until 3 1/2 times its original volume. This will probably take about 3 hours.

- Add the water, yeast and sugar to the bowl of your stand mixer (or to a large mixing bowl if you're making the bread by hand). Mix together with a fork and let sit for about 5 minutes.
- Once the yeast mixture is bubbly, add 5 1/2 cups of the flour and the salt (be sure the salt doesn't touch the yeast mixture directly - mix it in with the flour first).

- Preheat oven to 170 degrees F. Fill a glass measuring cup with 1 cup of water. Place in microwave and heat for 3 minutes, or until water is boiling.
- In another glass measuring cup, fill it with 1/3 cup warm water. Sprinkle the 1 Tablespoon of yeast over the water. With a fork, stir yeast into the water until yeast is completely dissolved.
- Pour the sugar, salt and shortening into the bowl of your stand mixer. Using a fork, mash these ingredients together. Pour the 1 cup of boiling water over the shortening mixture in the stand mixer. Add the 1 cup of cold water into the mixer. Then pour in the yeast/water mixture.
- Add 3 cups of flour into the mixer, and using the dough hook, turn mixer on low speed. With the mixer still on, slowly add in the remaining 3 cups of flour, 1 cup at a time. Once all 6 cups are in, turn speed to medium and let the dough mix for 6-8 minutes. The dough should be nice and elastic. Be careful not to over-flour. I used all 6 cups, but would not use any more than that.
