PORK CHOPS WITH ONIONS AND APPLES
I've always liked pork chops made with apples or onions. I decided to combine both ingredients to create this delicious recipe. Many family members and friends have requested it.

Steps:
- In a small bowl, combine the pepper, salt and garlic powder. Rub over pork chops. Grill chops, covered, over medium heat for 4-5 minutes on each side or until a thermometer reads 145°. Let stand 5 minutes before serving., Meanwhile, in a large skillet, saute onions and apples in butter until tender. Stir in brown sugar; cook until thickened and bubbly. Serve with pork chops.

This is by far one of the best recipes I've ever found! Succulent pork chops with a phenomenal spice rub cooked in a sweet sauce with onions and apples. A perfect autumn dish, but tasty all year-round!

Steps:
- Mix flour, sage, garlic, thyme, salt, allspice, and paprika together in a small bowl. Set aside 2/3 of the spice mixture for later use. Sprinkle remaining spice mixture onto the pork chops, coating all sides.
- Heat olive oil in a large skillet over medium-high heat. Add pork chops and cook in the hot oil until browned, 3 to 5 minutes per side. Remove pork from the skillet.
- Add onion to the skillet and cook until tender, about 3 minutes. Add apples; cook and stir for 2 more minutes. Stir in apple juice, brown sugar, and reserved spice mixture; bring to a boil.
- Reduce heat to low, cover, and simmer until pork is longer pink in the center, and reaches desired level of doneness, about 5 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

PORK CHOPS WITH APPLES AND ONIONS
Steps:
- Preheat the oven to 375 degrees F.
- Season the pork chops generously with salt. Coat a large saute pan with olive oil and bring it to a high heat. Sear the pork on both sides and on the fat edge, working in batches if the chops don't all fit in the pan at the same time. Be sure not to crowd the pan. Remove the pork from the pan and place on a cookie sheet. Finish the pork in the oven for about 10 to 12 minutes. Remove from the oven and let rest for 10 minutes before serving.
- Ditch the excess fat from the saute pan. Give a drizzle of fresh olive oil and add the onions and crushed red pepper and season with salt. Cook until the onions become soft and aromatic. Add the apples, cinnamon and rosemary and toss to coat with the oil. Add the cider and cook until the cider has reduced by two-thirds and the onion-apple mixture is very soft and saucy. Serve over the pork chops.

- In a large nonstick skillet, brown pork chops in oil over medium heat. Sprinkle with salt and pepper. Transfer to an ungreased 13-in. x 9-in. baking dish. , In the drippings, saute onions until tender. Spoon over chops; add broth. Cover and bake at 325° for 10-15 minutes or until a thermometer reads 145°. Remove pork chops and onions; keep warm. Let meat stand for 5 minutes before serving., In a small saucepan, combine cornstarch and water until smooth; stir in pan juices. Bring to a boil; cook and stir for 1-2 minutes or until thickened. FAMILY APPROVED APPLE AND ONION PORK CHOPS
Turned out nice and tender, and I've got pork critics! Especially pork chops, they can't be dry, at all.

Steps:
- Season your pork chops in salt and pepper, and other herbs and spices of choice :) Set aside.
- Half and thinly slice onions and cored apples. I leave the skin on, used red delicious.
- Mix brown sugar, cinnamon and ground ginger in a bowl.
- Layer half of onions and apples on the bottom of a lightly greased pan, (I use a 9X13 tin foil pan).
- Sprinkle with some of the brown sugar mixture.
- Arrange pork chops in a single layer on top.
- Layer the other half of onions and apples on top of pork chops.
- Sprinkle the rest of the brown sugar mixture on top of everything.
- Cover pan in plastic wrap and then cover with aluminum foil, tightly.
- Bake at 325 for 2.5 hours -- less if you are using boneless or fast fry. Mine were thin, regular pork chops.
- I used the drippings for gravy using a pork gravy pkg, and served with roasted cauliflower and carrots.

- Heat oil in large skillet on medium heat. Add chops; cook 3 to 4 min. on each side or until done (145°F). Transfer chops to plate, reserving drippings in skillet; cover chops to keep warm.
- Add apples, onions, thyme and dressing to drippings; cook and stir 1 min. Cover; cook 4 min., stirring occasionally. Stir in wine. Return chops to skillet; cook 1 min. or until sauce is thickened.

DH and I enjoyed this pork chop recipe from my Williams-Sonoma "Steak and Chops" cookbook. It's easy to prepare, without a lot of prep. We used vermouth. Prep time includes the at least 15 minute resting time for the meat at room temp.

- Slash the edges of the chops in 1 or 2 places to prevent curling. To make the rub, in a small bowl combine the sage, salt, and pepper. Rub the pork chops all over with the rub. Let stand at room temperature for at least 15 minutes or up to 1 hour, or cover and refrigerate overnight. Bring to room temperature, if necessary, before cooking.
- In a large frying pan over medium-high heat, heat the olive oil. Add the chops and brown for about 2 minutes on each side. Reduce heat to medium and cover the pan. Cook until the meat is lightly pink near the bone or an instant-read thermometer inserted away from the bone registers 145 degrees F (63 C), 4-5 minutes longer. Transfer the chops to a platter and tent them loosely with aluminum foil while you make the sauce.
- Pour off all but 1 Tb of the drippings from the pan. Add the onion and apple and saute until the onion is translucent, about 5 minutes. Add the vermouth and deglaze the pan, scraping up any browned bits from the bottom.
- Spoon the apple and onion mixture onto individual plates. Place the pork chops on top, drizzle with the pan juices, and serve.
