MY FAVORITE MACARONI SALAD

What would summer, or anytime really, be without macaroni salad? The variations are endless, but this one is my favorite. I hope you will give it a try and enjoy it as I do.

My Favorite Macaroni Salad image

Steps:

  • Combine the mayonnaise, vinegar, mustard, sugar, salt, and pepper.
  • Stir in the remaining ingredients and mix gently.
  • Cover and place in refrigerator.

1 cup mayonnaise
2 tablespoons cider vinegar
1 tablespoon yellow mustard
1 teaspoon sugar
1 teaspoon salt
pepper
8 ounces macaroni, cooked and drained
1 cup celery, chopped
1/2 cup red bell pepper, chopped
1/2 cup green bell pepper, chopped
1/4 cup chopped red onion
1/2 cup black olives, chopped
2 eggs, hardboiled and chopped
1/4 cup pimiento, chopped

Family Favorite Macaroni Salad image

Steps:

  • Cook macaroni according to package directions. Combine macaroni, celery, onion and celery seed in a large bowl; set aside. Mix together vinegar, milk and eggs in a saucepan; set aside. In a small bowl, mix together mustard, sugar and flour; stir into vinegar mixture. Cook over low heat, stirring constantly until smooth and thickened. Remove from heat; add mayonnaise, stirring until smooth. Stir into macaroni mixture. Refrigerate until chilled. Garnish with parsley, as desired. Tip: When you use up a jar of sweet pickles, save the juice! Use it to replace some of the vinegar in macaroni salads for extra zest.

Grandma's Macaroni Shrimp Salad image

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain and pour into a salad bowl.
  • Add mayonnaise, cucumber, peas, celery, radishes, green onions, and seasoned salt to the macaroni; toss well. Add shrimp last. Garnish with hard-boiled eggs, avocado, and tomato.
