SUGAR FREE PISTACHIO ICE CREAM - FREEZER MADE

You do not need an ice cream maker for this. Pistachio ice cream is my favorite & hard to find. I cannot digest sugar, so I took a woman's day recipe and changed it to fit my needs. I prefer salted pistachios, but feel free to use unsalted. You can use regular sugared pudding as well, but if you do, use the 3.4 oz size. This freezes very hard, so it's best to eat it up shortly after the first 2 hours!

Sugar Free Pistachio Ice Cream - Freezer Made image

Steps:

  • Put half and half and pudding mix in a medium size bowl and beat with a whisk for 2 minutes.
  • Stir in pistachios.
  • Pour into a metal cake pan and freeze at least 2 hours, until firm.
  • Every 30 minutes, while freezing, stir frozen edges towards the center with a rubber spatula.
  • Serve sprinkled with chopped pistachios.

FANNIE FARMER PISTACHIO ICE CREAM

This is my favorite ice cream recipe ever. I first tasted this as a kid. Our class had been assigned a history project when we had to track down "old fashioned" recipes that would have been served at the turn of the century. Parent volunteers then agreed to make the recipes we found to bring in for a food tasting. I was one of the kids assigned to locating the recipes, and I found this delicious recipe in the original 1924 edition Boston Cooking School Cookbook by Fannie Farmer. One of the parents made this and it was a huge hit. Prep and cook times are estimates, I have not made this in many years.

Fannie Farmer Pistachio Ice Cream image

Steps:

  • Mix flour, sugar, and salt.
  • Add egg and milk gradually.
  • Cook in a double boiler over hot water for 10 minutes, stirring constantly at first.
  • If the custard takes on a slightly curdled appearance, don't worry, this will disappear after freezing).
  • Allow to cool.
  • When cool, add cream, vanilla, almond extract, and a few drops of food coloring, enough to make it a pale mint green color.
  • Strain and freeze according to your ice cream maker's instructions.
  • When ice cycle has finished, stir in the nuts and store in an airtight container in the real freezer to "ripen" and firm up.

2 cups milk, scalded
1 tablespoon all-purpose flour
1 cup granulated sugar
1 large egg, lightly beaten
1/2 teaspoon salt
1 quart cream (the original says "thin cream")
1 tablespoon vanilla
1 teaspoon almond extract
2 -3 cups pistachios or 2 -3 cups peanuts, chopped
green food coloring

APRICOT-PISTACHIO ICE CREAM

I came across this recipe recently while looking for apricot recipes. Although I haven't made it yet it sounds delicious combining two of my favorite things (apricots and pistachios). Processing time is included with cooking time, but cooling time and freezing time is not included (allow overnight freezing and an additional 2-4 hours cooling/refrigeration time). Apricot-Pistachio Ice Cream image

Steps:

  • Combine water and sugar in medium saucepan over medium-low heat, stirring constantly until sugar dissolves. Increase heat and bring to a boil. Remove from heat.
  • Beat yolks in a large bowl until thick and forms a ribbon when beaters are lifted.
  • Whisk in sugar/water mixture.
  • Return mixture to saucepan over low heat, whisking constantly until mixture is thick enough to coat back of spoon. DO NOT BOIL.
  • Transfer mixture to bowl which is set over ice water. Cool, stirring occasionally.
  • Fold whipped cream into cooled egg mixture using a rubber spatula. Fold in apricot puree and pistachios.
  • Refrigerate until chilled (at least 1 hour or per manufacturer's directions).
  • Transfer mixture to ice cream maker and process per manufacturer's directions.
  • Turn into plastic container and freeze.

Apricot-Pistachio Ice Cream image

Steps:

  • Quarter the apricots, then warm them with the wine in a small saucepan.
  • Simmer five minutes, then cover, remove from the heat and let stand for one hour.
  • Coarsely chop the pistachios.
  • Puree the apricots, wine, sugar, half and half, and lemon juice in a blender.
  • Chill thoroughly in the refrigerator -- this will take at least 3 hours -- then freeze in your ice cream maker according to the manufacturer's instructions.
  • Add the psitachio nuts in the last five minutes of churning.

5 ounces dried apricots
3/4 cup white wine
1/2 cup pistachio nut, shelled

Bastani (Persian Rose Water, Saffron and Pistachio Ice Cream) image

Steps:

  • In a medium thick-bottomed bot, slowly heat the milk to boiling while stirring. Add the vanilla extract and saffron. Continue to cook on low heat, stirring occasionally while doing the next step.
  • Beat the egg yolks with the sugar until smooth and foamy. Very carefully and slowly, pour the egg/sugar mixture into the milk. Make sure to stir it rapidly with a fork or use a whisk while pouring (or you will end up with scrambled eggs in the ice cream!).
  • Continue heating the mixture on low heat while stirring constantly with a wooden spoon until thickened (it should be foamy and coat the spoon).
  • Pour the custard mixture into a bowl, and refrigerate until well chilled.
  • Once cold, stir in the cream, rose water or extract, and chopped pistachios.
  • Churn in an ice cream maker until finished (or, stick in the freezer and vigorously stir every 30 minutes or so to break up the ice crystals, until it is homogenous and frozen).

Steps:

  • Add ground pistachios and ¼ cup of the sugar to a pan. Add milk and bring to boil. Add vanilla, stir and remove from heat.
  • Add the 5 egg yolks and remaining ½ cup sugar to a bowl, and mix well. Temper the egg yolks by taking a ladle's worth of hot milk from the pan and pouring into the bowl with the eggs, constantly stirring.
  • Add back to heat and cook for 7-10 minutes over medium-low heat, don't let it boil. Once done, strain into a bowl, pressing with a spoon to let the cream come through; then place in refrigerator to chill for 2 hours.
  • Remove from fridge, and mix in heavy cream and the ½ cup of whole pistachios.
  • Turn on ice cream maker, slowly pour mixture into ice cream maker and proceed as directed, churning for about 10-12 minutes .
  • Empty into freezer safe bowl and let chill for 2 hours (if you can wait!) Then serve.

Steps:

  • Place freezer bowl of ice cream maker into the freezer. It is better to keep it in there 24/7 that way it is always ready.
  • In a medium bowl, whisk the milk and granulated sugar until the sugar is dissolved.
  • Stir in the heavy cream.
  • Stir in the 2 packages of pistachio pudding mix, making sure there are no lumps.
  • Pour mixture into the freezer bowl and let mix until it has thickened (about 25-30 minutes).
  • Remove ice cream from freezer bowl and place into a separate container.
  • Cut up about 1/4 cup of maraschino cherries. Remove the stem. Add a little bit of the juice if desired. Depending on preferences, more/less cherries can also be used.
  • Place freezer bowl and the ice cream into the freezer to further harden.
  • Enjoy!
