Steps:

  • In a bowl, cream butter and brown sugar; beat in egg and extracts. Gradually add flour; mix well. Cover and chill for 1 hour. Shape into 1-in. balls; pinch front of each ball to form a nose. Add two peanuts halves for ears, two raisin pieces for eyes and one red-hot for nose. Poke a hole for tail with a toothpick. Place on ungreased baking sheets. Bake at 325° for 12 minutes or until bottoms are lightly browned. Cool on wire racks Insert licorice pieces for tails.

World's Easiest Chocolate Mousse in a Cookie Bowl image

Steps:

  • For the mousse: Use the double boiler method to melt the chocolate. Fill a pot with approximately 2 inches of water and bring to a simmer over medium-low heat.
  • Place the chocolate in a heatproof bowl on top of the pot, making sure the bowl does not touch the water in the pot. Heat, stirring with a spatula, until the chocolate is melted, smooth and shiny. Allow to cool for 5 minutes.
  • Meanwhile, pour the cream into a bowl and whip with a handheld mixer until soft peaks form. Carefully fold the chocolate into the cream until fully incorporated. Add the mousse to a pastry bag or resealable plastic bag. Refrigerate for 30 minutes to set.
  • For the cookie bowls: Preheat the oven to 350 degrees F. Spray nonstick cooking spray into the cups of a 12-cup standard muffin tin.
  • Press about 2 1/2 tablespoons of cookie dough into each cup of the muffin tin, pressing the dough in the bottom and up the sides. Bake until the edges are golden brown but the centers are still soft, 14 to 16 minutes. If the centers of the cookie cups don't fall a bit when you remove the tin from the oven, use the bottom of a measuring cup or a small bowl to press the centers down. Cool in the tin for 5 minutes.
  • When ready to enjoy, pipe the mousse into each cookie bowl and top with berries and shaved chocolate if desired.

Steps:

  • In a microwave, melt chocolate chips; stir until smooth. Stir in 1 cup wafer crumbs and sour cream. Refrigerate, covered, 1 hour or until firm enough to shape., Place remaining wafer crumbs in a shallow bowl. For each mouse, roll about 1 tablespoon crumb mixture into a ball; taper one end to resemble a mouse. Roll in wafer crumbs to coat. Attach nonpareils for eyes, sliced almonds for ears and licorice pieces for tails. Store in an airtight container in the refrigerator.

Old-Fashioned Farmhouse Oatmeal Cookies image

Steps:

  • Position a rack in the middle of oven; preheat to 350°.
  • Grease several large baking sheets or coat with nonstick spray.
  • In a large heavy saucepan over medium heat, melt the butter, stirring, until completely melted and runny; remove from heat.
  • Thoroughly stir the oats and 1 tablespoon water into the butter.
  • Let stand for 5 minutes so the oats can hydrate.
  • Vigorously stir in the sugar, baking soda, cinnamon, and salt until thoroughly incorporated.
  • Vigorously stir in the egg and raisins, then the flour until very well blended.
  • If the dough is very soft, stir in 1-2 tablespoons more flour.
  • If it is still soft, let stand to firm up for 5 minutes.
  • In a large bowl, vigorously stir the brown sugar into the butter until well blended, mashing out any sugar
  • Using a 1 1/2-inch spring-loaded scoop or heaping measuring tablespoon, form the dough into uniform mounds, spacing about 2 1/2 inches apart on the baking sheets.
  • Using your fingertips, pat down the mounds just slightly.
  • Bake one sheet at a time for 7-10 minutes or until the cookies are barely firm in the center tops , tinged with brown, and slightly darker at the edges.
  • Transfer the baking sheets to wire racks; let stand until the cookies firm up for 3 minutes.
  • Using a wide spatula, transfer the cookies to the wire racks; let cool completely.

A good, old fashioned, mid-western cookie! We grew up eating these cookies. My grandma made them often! This recipe calls for melting the shortening and then creaming it with the sugar. I think that is the secret to making these cookies so crispy and light!

  • Melt shortening, pour over sugars. Mix well.
  • Add eggs and vanilla and mix well.
  • Stir dry ingredients together and add to sugar mixture. Mix lightly.

Steps:

  • Whisk to combine flour and salt in a bowl. In a separate bowl, beat butter with an electric mixer on medium-high speed until creamy, about 2 minutes. Add sugar gradually, beating until mixture is pale and fluffy, about 3 minutes. Beat in extract, then egg. Reduce speed to low, and add one-third flour mixture. Gradually add remaining flour mixture, beating just until blended. Halve dough and shape into disks; wrap each in plastic, and chill 2 hours or up to 1 day.
  • Preheat oven to 350 degrees. Roll about 1 tablespoon of chilled dough between your palms to form 1 1/4-inch- to 1 1/2-inch-long oval shapes. Slightly elongate one side to form face. Gently pinch bridge of nose to form eye sockets. With a paring knife, make 2 small slits at top of each shape, for placement of ears. Place 2 sliced almonds into slits. Place shapes on parchment-lined baking sheets, spacing 2 inches apart.
  • Bake, rotating sheets halfway through, until cookies are light golden brown on bottom and around edges, and tips of ears are golden brown, about 20 minutes. Transfer sheets to wire racks, and immediately insert a wooden skewer about 1/2 inch into mouse's rounded end. Remove skewer and insert curved length of licorice for tail. It should adhere to the still-warm cookie. Let cookies cool completely on wire racks.
  • Melt chocolate in a heatproof bowl set over (not in) a pan of simmering water. Turn off heat; keep chocolate warm until ready to use, stirring occasionally. Place melted chocolate in a parchment cone or a resealable plastic bag with a tiny hole cut in one corner. Pipe chocolate in tiny dots to form eyes and nose. Chill until chocolate is set, about 20 minutes. Cookies can be stored in a single layer in an airtight container at room temperature up to 1 week.
