- Preheat oven to 450°. In a large bowl, whisk flour, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Add milk; stir just until moistened., Turn onto a lightly floured surface; knead gently 8-10 times. Pat dough to 1/2-in. thickness. Cut with a 2-1/2-in. biscuit cutter., Place 1 in. apart on an ungreased baking sheet. Bake until golden brown, 10-15 minutes. Serve warm.

Steps:
- Heat oven to 450 degrees.
- Mix together the dry ingredients in a bowl.
- Cut in the yogurt until like coarse crumbs.
- Add water or milk all at once.
- Stir quickly with fork just until dough starts to stick together.
- Lay dough on lightly floured surface.
- (Dough will be soft).
- Knead gently 10 to 12 strokes.
- Roll or pat dough to 1/2-inch thick.
- Dip biscuit cutter in flour; cut dough straight down.
- Bake on foiled baking sheet for 10 to 12 minutes.
- Makes approximately 10 to 12 biscuits.

J.P.'S BIG DADDY BISCUITS
This recipe will produce the biggest biscuits in the history of the world! Serve these gems with butter, preserves, honey, gravy or they can also be used as dinner rolls...you get the picture. The dough can also be prepared several hours, and up to a day ahead of time. If so, turn dough out onto aluminum foil that has been either floured, lightly buttered or lightly sprayed with cooking spray. Roll up foil until it is sealed, and refrigerate. Don't be surprised if your biscuits rise even higher because the baking powder has had more time to act in the dough. You may have to make a few batches before you get desired results: desired results equals huge mongo biscuits.

- Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl, whisk together the flour, baking powder, salt, and sugar. Cut in the shortening until the mixture resembles coarse meal. Gradually stir in milk until dough pulls away from the side of the bowl.
- Turn out onto a floured surface, and knead 15 to 20 times. Pat or roll dough out to 1 inch thick. Cut biscuits with a large cutter or juice glass dipped in flour. Repeat until all dough is used. Brush off the excess flour, and place biscuits onto an ungreased baking sheet.
- Bake for 13 to 15 minutes in the preheated oven, or until edges begin to brown.

Steps:
- Combine dry ingredients in a medium mixing bowl with a whisk.
- Mix in shortening with your fingers until it resembles a coarse crumb (or use a food processor).
- Stir in yogurt and half and half until it just comes together, do not over mix.
- Lay out a sheet of wax paper, parchment paper or freezer paper and dust with flour.
- Dump out dough and coat your hands with flour. Pat out until its about 1" thick.
- Using the paper, fold over the dough and pat out, repeating about 4 times.
- Pat out dough to about 3/4" and cut with a 2" ring cutter.
- Bake in a 400 degree oven for 14-16 minutes.
FAT FREE, LOW CAL BISCUITS!
Let me start off by saying HALLELUJAH!! My parents are BIG biscuit eaters, and dinner every night is a battle for me to turn down the biscuits. I adapted this recipe from a traditional "mayo" biscuit, and it is yummy! They come out very fluffy and are not cursed with the nasty baking powder flavor that most healthy biscuits have. I hope to soon experiment with oat flour in this recipe!! This is by far one of my favorite healthified recipes!

- Cook 6 ounces of potato. Poke it several times with a fork and microwave for 3-4 minutes or steam or boil. (If you have to cook more than 6 ounces, measure it afterwards and only use one heaping half cup.)
- Allow the potato to cool until you can comfortably peel it. Mash it well in a bowl with 1 tablespoon milk and nutritional yeast. Put it in the refrigerator to cool while you mix the dry ingredients.
- Preheat oven to 425 and line a baking sheet with parchment paper or silicone mat. Combine the flours, baking powder, soda, and salt. When the potato is no longer warm, add it to the flour and "cut" it in using a fork or pastry blender until the mixture is crumbly.
- Combine the non-dairy milk and lemon juice and add it, stirring until a soft dough forms. If all flour is not moistened, add additional milk a teaspoon at at time until dough can form a ball.
