CHILI CHEESE GRILLED CHEESE BITES

The classic chili cheese flavors are getting the grilled cheese treatment! We make a quick, spreadable chili, then we encompass it with several layers of cheese. The secret is cooking the bread on melted Cheddar to add an outer, cheesy crunch that seals off the inside.

Chili Cheese Grilled Cheese Bites image

Steps:

  • Preheat a cast-iron skillet over medium-high heat. Place the beef in a thin, single layer and cook, undisturbed, until the bottom begins to brown, about 5 minutes.
  • Meanwhile, make the seasoning. Mix the garlic powder, cayenne, cinnamon, cumin, mustard powder, onion powder and paprika and 2 teaspoons salt in a small bowl. Check to make sure the bottom of the beef is a brown color, add the seasoning, then stir to combine and cook for 4 minutes. Stir in the tomato paste and cook until the mixture is brick red, about 1 minute. Stir in 3 ounces of water, then remove from the heat.
  • Preheat a large nonstick pan or griddle over medium heat.
  • Place 4 of the bread slices on a work surface. On each slice, spread 1 tablespoon (0.5 ounce) of cream cheese, then top with 1 heaping tablespoon of Cheddar and set aside.
  • Spread 2 heaping tablespoons of the chili on 4 more of the bread slices.
  • Place 2 heaping tablespoons of Cheddar on the top left corner of the pan, spreading it out so it resembles the shape of a brioche slice as much as possible. Repeat three more times to create 4 squares or rectangles.
  • Place each cheese-topped bread slice, cheese-side up, on top of a square of melting Cheddar. Top each with a chili-topped bread slice, chili-side up. Cook until the cheese starts to turn dark, golden yellow around the edges and is slightly crispy, about 5 minutes. Transfer the sandwiches to a plate.
  • Place 2 heaping tablespoons of Cheddar on the top left corner of the pan, spreading it out so it resembles the shape of a brioche slice as much as possible. Repeat three more times to create 4 squares or rectangles.
  • Place each of the 4 remaining bread slices on top of a square of melting Cheddar. Top with the sandwiches, chili-side down. Cook until the bottoms are crunchy and golden, about 5 minutes more. Transfer to a cutting board. Cut each sandwich into 4 squares and serve immediately.

8 ounces 80/20 ground beef

Cheese-Stuffed Peppers: Chile Rellenos image

Steps:

  • Preheat oven to 450 degrees F. Brush peppers with 2 tablespoons of the oil (reserving the balance of the oil) and roast until blackened, about 10 minutes. Remove and cover roasting pan with foil or use tongs to transfer peppers to a plastic bag. Let "sweat" for 15 minutes. This will help you remove the skin from the pepper.
  • In a small bowl, mix jack cheese, goat cheese, thyme, rosemary, and sage, and mash together.
  • Peel charred skin from peppers and stuff each pepper with about 2 tablespoons of the cheese/herb mixture. Heat the remaining 2 tablespoons of the oil over medium heat in a large skillet. Spread blue cornmeal on a piece of waxed paper and roll stuffed peppers to coat with cornmeal. Sear coated peppers on all sides, leaving undisturbed for the first 2 minutes to allow the cornmeal to integrate into the surface of the peppers and to allow the caramelization process to begin to prevent crusting off of the cornmeal.
  • Transfer to a platter and let rest for 5 minutes before serving.

16 (8-inch) Anaheim peppers, stems and seeds removed
4 tablespoons grapeseed oil (2 tablespoons to brush on peppers and 2 to saute)
1 cup grated Monterey Jack cheese (from about a 6-ounce piece before grating)
1 cup crumbled goat cheese (about 4 to 6 ounces)
1 tablespoon minced fresh thyme leaves (stripped from about 4 or 5 sprigs)

Hatch Chilies in season or Poblano peppers the rest of the year get a simple, tasty treatment in a recipe that yields a lot of flavor for very little work. Great for picnics and cookouts. These re-heat beautifully in the microwave so you don't need to be afraid to make the whole batch, but its easy to cut the recipe in half if you prefer. And if you are feeding anyone who can't tolerate hot peppers you can substitute Cubanelles or Italian Frying Peppers.

Grilled Chilies With Beef and Cheese Stuffing #RSC image

Steps:

  • Brown the ground beef. Drain excess fat. Stir in softened cream cheese while still hot so that it melts evenly together.
  • Mix jack cheese, tomatoes, onions, and salt into the beef-cheese mixture.
  • Clean seeds out of peppers by first cutting around the stem then gently sliting one side of the pepper lengthwise almost but not quite to the end.
  • Stuff the peppers with the meat mixture. Don't overstuff, you want to be able to close the slit so that the cheese doesn't leak out.
  • Wrap each pepper in foil and fold the ends over to create a good seal.
  • Grill on medium-high with the lid down about 3-5 minutes per side (rolling at least 3 times), or until the pepper is grilled to the desired doneness and the filling is hot. Grilling an extra, unstuffed pepper in the usual way can serve as a doneness indicator since it would be done just a little bit before the stuffed pepper. We like our peppers tender but not mushy.
  • I recommend serving with a summery salad with plenty of tomatoes and cucumbers in it, tortillas, and Mexican rice.
  • Note: Can be prepped ahead and held in the fridge before grilling but grilling will take longer if the filling is cold.
  • Note: Peppers vary in size so if you have any filling left put it into a small dish and heat well to serve with tortillas or pita chips.
  • Note:Wear gloves when handling the chilies and be careful not to touch eyes or other sensitive body parts.
  • Option: Mix could be used to stuff Jalepeno peppers as appetizers if you cut the tomatoes small enough and used a fish basket for the grilling.
  • Option: If you are feeding people who can't handle hot peppers substitute Cubanelles or Italian Frying Peppers. I do not recommend bell peppers for this recipe because the peppers will cook to the mushy point by the time the filling is hot.

  • In a large saucepan, heat 2 tablespoons of olive oil until shimmering. Add half each of the onion and garlic and cook over moderate heat until they are softened, about 6 minutes. Add the tomatoes and their liquid and cook the sauce over moderate heat for 25 minutes.
  • Light a grill or preheat the broiler. Rub the poblanos and habanero lightly with olive oil and grill or broil, turning frequently, until the skins are charred but the chiles are still firm, about 3 minutes. Transfer the charred habanero to a plate and set aside. Transfer the charred poblanos to a bowl, cover with plastic wrap and let stand for 15 minutes, or until cool.
  • Peel the poblanos, being careful not to rip the flesh. Make a lengthwise slit down one side of each poblano and carefully remove the core and seeds.
  • Working in batches, puree the tomato sauce until smooth. Return the puree to the saucepan and add the whole, unpeeled charred habanero. Simmer the sauce over moderate heat, stirring occasionally, until very thick, about 40 minutes; be careful not to break the habanero or the sauce will be extremely spicy. Remove the habanero and discard. Season the tomato sauce with salt and pepper.
