FAT FREE LOAF (WITH DATES AND CARROT-YUMMY!)
I found this recipe on an internet forum - inventer unknown. It is a boiled fruit loaf- super easy, and can all be mixed in the one pot. It is well liked by children and adults, and is nice with butter (not fat free!) Aparently if cut into 15 slices, 1 slice = 1.5 weight watchers points. This is great made with gluten free flour, it is also vegan.

Steps:
- Combine dates, brown sugar, bicarb soda and water in a pot. Bring to boil, simmer for 1-2 mins (stir a few times) then turn off heat and leave to cool.
- Preheat oven to 180 degrees Celsius Grease a 22x 11cm tin (or use baking paper).
- Add carrot to date mix (I just grate straight into pot) a 1/2 or whole apple is also nice grated in too (I don't wait until date mix is totally cool).
- Sift flour and spices together and add to mix. (I don't- I just chuck it all into the pot! Saves on dishes).
- Mix well and spoon into loaf tin. You can add extra water if too dry to mix well.
- Bake for 40-50 minutes Use a skewer to check if middle cooked.
- Note- if using gluten free flour (not self raising) add 2- 2.5 teaspoons of baking powder + 1 tsp (optional) of guar gum.
DATE AND WALNUT LOAF - DAIRY FREE & FAT FREE
This is a very tasty, moist, sin free loaf. When sliced it's also great toasted, spread with low fat cream cheese. You can also include mixed nuts & carob buttons to the walnuts as a variation. You can also substitute the maple syrup for golden syrup. The loaf also freezes well.

Steps:
- Preheat the oven to moderate (180C/160C fan forced) Grease a 14cm x 21cm loaf pan.
- Combine dates and maple syrup in a large heatproof bowl, add the boiling water and stand for 15 minutes.
- Add walnuts, sugar, rolled oats, sifted flour and soda, stir into date mixture until well combined.
- Spread mixture into the prepared pan, sprinkle with sesame seeds and bake for approximately 50 minutes or until cooked when tested. Stand for 5 minutes before turning onto a wire rack to cool.
- Enjoy!

FAT FREE MALT LOAF
Unlike some malt loafs, this doesn't use yeast to rise. This is a type of cake-like bread eaten in slices with tea. I like it with butter, but some people don't.

Steps:
- Preheat oven to 180 C or 350°F
- Line the base of a 1lb loaf tin with greaseproof paper, cut to fit.
- Sieve flour and ground ginger into a bowl.
- Stir through bicarbonate of soda and sultanas, then bind ingredients with golden syrup and water - enough to make a fairly soft consistency.
- Turn the mixture into the tin and level off.
- Bake the loaf for about 55 minutes, or until risen and firm to the touch.
- Allow to cool in the tin for 10 minutes, then turn on to a wire tray to cool completely.
- Serve sliced with tea.

Steps:
- Place carrot, apple, dried fruit, water, juice, sugar and cinnamon in pot.
- Bring to the boil, simmer 15 minutes.
- Set aside to cool.
- Fold in sifted flours and bananas.
- Spoon mixture into greased loaf tin 10 x 20 cms.
- Bake 180 C for 50 - 60 minutes or until cooked when tested.
- Turn onto wire rack to cool.
- Slice and serve with butter.
