AMERICA'S FAVORITE CHILI

Steps:
- Heat a large pot over medium heat and add oil. Add beef and sprinkle with baking powder. Brown beef, stirring to break up into smaller chunks, until no longer pink, 5 to 10 minutes. Using a slotted spoon, remove beef to a bowl.
- Add onions to pot and turn heat down to low. Cook, stirring occasionally, until soft, 8 to 10 minutes. Stir in chile powder, cumin, smoked paprika, cayenne and oregano and cook for another 2 minutes to bloom. Add garlic and saute for 30 more seconds. Add beef stock, demi-glace, tomatoes and beans. Add beef back in along with any reserved juices and simmer, partially covered and stirring frequently, for 2 hours. Season to taste with salt and pepper.
- Garnish with scallions, cilantro, sour cream, pickled jalapenos and aged Cheddar.
FAVORITE CHILI
I received this recipe from a friend and have modified it to suit my family's tastes. Our three children especially like this slightly sweet chili because it's not too spicy.

- In a Dutch oven or soup kettle, brown beef in oil; drain. Add the onion, green peppers and garlic; cook until tender. , Add the next eight ingredients; bring to a boil. Reduce heat; cover and simmer for 2 hours, stirring occasionally. Add beans and cornmeal; simmer for 15 minutes, stirring frequently. Garnish with cheese and onion if desired.

- In a large saucepan, cook turkey and onion over medium heat until meat is no longer pink; drain. Stir in the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer until heated through, 15-20 minutes.

FAVORITE CHILI
This is a recipe that I have made for years. It originally comes from the little recipe book that came with my Rival crockpot, but I have made many revisions to it, so it is quite abit different than the original. I am always picky about my spices, I believe in very good quality fresh spices and herbs, I always order my chili powder and cumin from a high quality spice company. Since I can not tolerate hot spice, I always use mild chili powder, but if you prefer hotter chili, feel free to heat it up with the hotter variety, just make sure it is fresh and good quality. Also the chocolate bar that is added is optional, but it makes a darker, richer and obviously more complex flavored sauce to the chili. I am sure this can also be made on the stove top, if you are so inclined. This is really delicious with Juniors cornbread, and pass the grated cheese and chopped onions please! This makes alot of chili, you can probably halve it if you have a smaller crock-pot.

Steps:
- Cut steak into bite sized pieces and brown in fry pan, until evenly browned on all sides.
- Put all ingredients in crock-pot in order listed.
- Stir once.
- Cover and cook on low 10 to 12 hours. (High:5 to 6 hours).
- Stir again when cooking time is completed to make sure chocolate is thoroughly blended in to chili.

MY FAVORITE CHILI
This is the only chili recipe I've used for the last 8 years or so. I think its pretty outstanding. I vary the hot ingredients depending on who will be eating it and the mood I'm in. I've also used ground venison and it was just as good.

Steps:
- In a large kettle, stir fry the onion, green pepper, celery and garlic in the vegetable oil for about 8 minutes or until tender.
- Add the ground beef and cook until done.
- Drain.
- Return meat to kettle, add remainder of ingredients (and kidney beans) and enough water to come to the top of the chili ingredients.
- Stir til mixed completely.
- Simmer on low heat, uncovered for at least 3 hours.
- Top with cheddar cheese and sour cream if desired.

- In a large pot add the olive oil over medium high heat. Add the onion, bell pepper and garlic and sauté until almost tender. Add in the ground beef and cook and crumble until brown.
- Add in the beef broth, tomato sauce, diced tomatoes, pinto beans, kidney beans, chili powder, oregano, cumin, coriander, salt and cayenne.
