EASY FESTIVE FRUIT SALAD

As colorful as the leaves on the autumn trees, this fruit salad disappears fast down to the last spoonful. The light dressing doesn't hide the refreshing flavors of the fruit. Pecans add crunch and the rich flavor of the harvest season. -Julianne Johnson, Grove City, Minnesota

Easy Festive Fruit Salad image

Steps:

Drain pineapple, reserving juice. Set pineapple aside. In a small saucepan, combine sugar and flour; stir in reserved pineapple juice until smooth. Bring to a boil. Remove from the heat. Stir a small amount of hot mixture into egg; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir for 1 minute or until thickened. Remove from the heat; cool for 15 minutes. Cover and refrigerate. , In a large serving bowl, combine the oranges, pears, kiwi, apples, pecans and reserved pineapple. Drizzle with dressing; toss to coat. Cover and chill for 1 hour.

Steps:

Whisk limeade and honey until blended.
Slowly whisk in oil until thick and smooth.
Dip bananas, apples and pears in mixture.
Line platter with leaves.
Arrange red and green grapes, apricot and starfruit in alternating groups in a circle around outside edge of platter.
Alternate orange slices and more star fruit with apple and pear slices in a smaller circle.
In the next circle, arrange kiwi, pineapple, bananas and strawberries.
Sprinkle raspberries over all.

1 head swiss chard or 1 head kale
1 bunch green grape
1 bunch red grapes
1 package dried apricot halves
2 star fruit, sliced 1/4 inch thick
3 bananas, sliced 1 inch thick
2 apples, red and green,sliced 1/4 inch thick
2 pears, sliced 1/4 inch thick
2 oranges, peeled and sliced
2 kiwi, peeled and sliced
1 fresh pineapple, sliced and chunked
1 pint strawberry
1 cup raspberries
1/3 cup frozen limeade concentrate, thawed
1/3 cup honey
1/3 cup vegetable oil

In a second medium bowl, mix GREEN grapes and chopped Granny Smith apples. (As directed in the post, if desired, reserve a few green grapes and apple pieces to line the outside of your clear glass serving dish, before adding the yogurt dressing.) Then, stir 1/4 cup of the yogurt dressing mixture into the (remaining) green grapes and apples. Spoon this mixture evenly into the bottom of your serving bowl.
In a third medium bowl, mix RED grapes, chopped Honeycrisp apples, cranberries, and 1/2 cup pomegranate arils. (As directed in the post, if desired, reserve a few red fruit pieces to line the outside of your dish, before adding the yogurt dressing.) Then, stir 1/4 cup of the yogurt dressing mixture into the (remaining) red fruit mixture. Spoon this mixture evenly into the serving bowl, on top of your green fruit layer.
Evenly spread the remaining fruit salad dressing on top of the red layer, pushing it near the edge but not fully against the glass (so it doesn't drip down too much and slightly obscure the red layer beneath it).
