Fiesta Mexican Soft Tacos Recipes

Steps:

• Mix beans, salsa and peppers in medium saucepan; stir in water. Bring to boil on medium-high heat.
• Stir in rice; cover. Cook on medium-low heat 5 min. Remove from heat; stir. Let stand, covered, 5 min.
• Spoon rice mixture evenly onto tortillas; sprinkle with cheese. Fold tortillas in half to serve.

Steps:

• Heat oil in a large skillet over medium-high heat. Add onion and sauté until lightly browned, stirring often, about 4 minutes. Add beef and cook until lightly browned, about 4 minutes.
• Add chili powder, cumin, pepper, chiles, tomatoes, corn, and beans and stir until heated through, about 3 minutes.
• Season to taste with salt, if needed. Transfer to a serving bowl and keep warm.
