GRILLED FILET STEAK AND ARUGULA

Steps:
- Prepare a charcoal grill with hot coals or turn a gas grill to medium-high heat.
- Meanwhile, pat dry the filets mignons with paper towels. Brush the filets lightly all over with the oil. Combine the fleur de sel and cracked pepper on a plate and roll the filets on all sides in the mixture, pressing lightly to help the salt and pepper adhere. The steaks should be evenly coated with the fleur de sel and cracked pepper.
- Meanwhile, whisk together the olive oil, lemon juice, mustard, kosher salt, and freshly ground black pepper. Set aside.
- When the grill is ready, place the steaks on the grill. Cook them for 5 minutes on each side for medium-rare or until the centers of the steaks register 125 degrees on an instant-read -thermometer. Remove to a plate, cover tightly with foil, and allow to rest for 10 minutes before slicing thickly.
- Toss the arugula in a large bowl with enough of the dressing to moisten; divide among 4 plates. Place a steak on top of each salad. Shave the Parmesan onto each steak with a vegetable peeler, sprinkle with salt, and serve hot.
FILET MIGNON WITH ARUGULA SALAD
Yet to try this, but I am dying to! I received some Omaha Steaks for Christmas and am looking for a way to cook the tenderloins in the kitchen and not on the grill (darn winter!) I am posting this for safekeeping, but feel free to try it out. This is from Cooking Light Jan/Feb 2009 edition. Enjoy!

- Heat a large nonstick skillet over medium-high heat and coat pan with cooking spray.
- Sprinkle beef with 1/4 teaspoon salt 1/8 teaspoon black pepper.
- Add beef to pan; cook 4 minutes on each side or until desired degree of doneness.
- Remove beef from pan; keep warm.
- Melt butter in pan; coat pan with cooking spray.
- Add remaining 1/4 teaspoon salt, remaining 1/8 teaspoon pepper, red onion and mushrooms to pan.
- Saute 4 minutes or until mushrooms release their liquid.
- Combine lemon juice and arugula in a large bowl.
- Add mushroom mixture to arugula mixture; toss gently to combine.
- Arrange 1 1/2 cups salad mixture on each of 4 plates; top each serving with 1 steak.

- In a large bowl, combine the romaine lettuce, Belgian endive, red onion, baby arugula and cherry tomatoes, and half of the cheese. Toss the salad with enough vinaigrette to coat. Season the salad with salt and pepper, to taste. Arrange the salad on a platter.
- Cut the steaks crosswise into thin slices. Arrange the steak slices atop the salad and sprinkle with the remaining cheese. Drizzle more vinaigrette over the steak slices and serve.
- Mix the vinegar, lemon juice, honey, salt, and pepper in a blender. With the machine running, gradually blend in the oil.
GRILLED SPICY FILET MIGNON SALAD WITH GINGER-LIME DRESSING
Steps:
- Whisk soy sauce, lime juice, chile paste, and peanut oil together in a small baking dish. Add the steaks, turn to coat, cover, and let marinate for 30 minutes in the refrigerator. Remove from the refrigerator 15 minutes before grilling.
- Heat grill to high. Remove steaks from marinade and pat dry. Season both sides with pepper and grill for 3 minutes per side or until slightly charred and cooked to medium-rare doneness. Remove from the grill, let rest 5 minutes, and slice into 1/4-inch thick slices.
- While steak is resting, combine all salad ingredients in a large bowl. Toss with half of the dressing and season with salt and pepper. Transfer to a platter, top with the steak, and drizzle the remaining dressing over the top.
- Whisk ingredients together in a small bowl. Season with salt and pepper, to taste. Let sit 10 minutes before using.
ARUGULA SALAD WITH STEAK, SHAVED PARMESAN AND LEMON VINAIGRETTE

- Place the arugula in a very large bowl, ideally one that could hold twice as many leaves. Drizzle over the olive oil and use your hands to toss lightly, then add the lemon juice and 1/4 teaspoon salt. Lightly toss the greens until they are evenly glossy; avoid overmixing or crushing the greens.
- Add the Parmesan and toss just to incorporate. Taste. If the salad is too sharp, add another drop of oil and toss. If the salad is dull, add a sprinkle of salt and some lemon juice and toss. Eat right away.

- Over medium heat add butter and mushrooms to an oven-proof frypan. Let mushroom set without disturbing for 3-4 minutes. Stir and allow to cook 2 more minutes and remove to a bowl.
- To same frypan add oil and bring heat up to high. Sprinkle salt and pepper evenly over filet on both sides and and sear filet 2 minutes without disturbing. Turn filet over and sear 2 minutes. Holding filet with tongs also sear each side 1-2 minutes. Repeat this searing time on each side. Total time will be approximately 10 minutes.
- Place pan in preheated oven until internal temperature of filet is 125-130 degrees (for medium rare), approximately 10-12 minutes. Remove from oven and cover tightly with aluminum foil and allow to set 10 minutes. Steak will continue to cook a bit and will juice up.
