MACADAMIA NUT CRUSTED TILAPIA
Steps:
- Preheat your oven's broiler. Line a baking sheet with aluminum foil.
- Combine macadamia nuts, soy sauce, garlic, hot sauce, brown sugar, olive oil, and black pepper in a food processor; blend until the mixture is the consistency of paste.
- Spoon a thick layer of the macadamia mixture on top of each tilapia fillet. Place the fish macadamia mixture-side up on the prepared baking sheet. Under the broiler, cook fish until the macadamia crust is golden brown and the tilapia flakes easily, about 15 minutes.

FILLET OF FISH MACADAMIA
Steps:
- Season fish with peppercorns and salt. Mix egg yolk, 2 tablespoons clarified butter and juice of 1/4 lemon together. Brush yolk mixture onto fish and press nuts into each side. Place 2 tablespoons clarified butter in frypan. When hot add fish and fry 3 minutes each side, add heated sherry and set alight. Add chopped parsley stalks. Place fish on serving dish. Add 1 tablespoon butter and extra lemon juice to frypan, pour sauce over the fish.

One evening when my husband and I went out to dinner, he ordered a salmon dish that sounded interesting. It was wonderful. When I tried duplicating it at home, he said mine was as good as, if not better than, the original. That made my day!

- Sprinkle fish with salt and pepper. In a shallow bowl, whisk egg white until frothy. Dip fish in egg white, then coat with nuts. Gently pat nut mixture onto fish., In a large skillet, cook fish in oil over medium heat for about 6-8 minutes on each side or until fish flakes easily with a fork. Meanwhile, melt butter. Stir in parsley and lemon juice. Drizzle over fish. Serve with rice.

Steps:
- Heat the olive oil in a pan over medium heat.
- Add the fish fillets and cook 2- 3 minuts each side( cooking time depends on the thickness of the fillets). Transfer to a warmed plate and cover with foil to keep warm.
- Reduce heat to medium low. Add the butter and chopped macadamias. Cook, stirring, for about a minute- until the butter and nuts are light golden brown. Watch carefully as you dont want the butter to burn.
- Remove from the heat. Season with salt and pepper. Stir in the parsley.
- Serve the fish and spoon over the macadamin and butter sauce. Serve with lemon wedges.

- For the macadamia nuts, you want enough to be able to have a good crust on your salmon after you have crushed them up. So enough to cover the top of the salmon with no salmon showing through the top crust. (see the picture above)
- First, crush up your macadamia nuts. We found that we like a coarser texture than what you see in the picture above. So I would use a food processor and pulse them until the nuts are coarsely ground, with some chunks. (Ground not too fine, and not too chunky – just medium). Set aside.
- On a baking sheet, lay out a sheet of tin foil, then lay out what ever size of salmon you are using, onto the foil.
