Steps:

  • If fish fillets are large, cut into serving pcs.
  • Pat fish dry.
  • Arrange in ungreased 12 x 7&1/2in baking dish.
  • Cook and stir mushrooms and onion in butter until mushrooms are golden, about 3 minutes.
  • Spoon mushrooms mixture over fish; sprinkle with salt and pepper.
  • Mix sour cream and cheese.
  • Spread over mushroom mixture.
  • Sprinkle with bread crumbs.
  • Bake ucovered at 350 degrees F until fish flakes easily with fork, 25 to 30 minutes.
  • Sprinkle with paprika and parsley.

Steps:

  • Place fillets in sprayed 2 qt. baking dish
  • Combine salt, Tabasco, paprika, sour cream and Parmesan and spread over fillets, covering them completely.
  • Top with crumbs and dot with butter.
  • Bake at 350 degrees for 30 minutes.

Pan Seared Salmon with Sour Cream and Dill image

Steps:

  • Coat a large skillet with olive oil and place over medium heat. When hot, add the fillets to the pan skin side down; season with salt and pepper. Cook for 5 minutes until the skin is nice and brown. Turn the fish over and cook for 3 minutes on the other side. Keep warm while preparing the sauce.
  • In a small bowl whisk together sour cream, dill, lemon juice, shallot, red pepper flakes and horseradish. Season with salt and pepper. Serve the sauce over the pan-seared salmon.

  • Soak whole salt herrings for 12 hours in several changes of cold water. Remove herrings from water and bone and skin them, producing 6 or 8 fillets.
  • Bring first 6 ingredients to boil. Remove from heat and cool completely.
  • Put fillets in suitable shallow dish, strain pickling liquid over them and marinate overnight in refrigerator. Cut into bite-size pieces before serving
  • Bring first 4 ingredients to boil. Remove from heat and cool completely.
  • Put herring fillets in suitable dish, pour unstrained pickling liquid over them and marinate overnight in refrigerator. Cut into bite-size pieces before serving.
  • Cut herring fillets into bite-size pieces, mix with sour cream, pickling liquid and onion. Refrigerate for at least several hours before serving.
