BALSAMIC VINAIGRETTE

This recipe is an accompaniment for Farfalle with Diced Tomatoes and Feta Cheese.

Balsamic Vinaigrette image

Steps:

  • In a small bowl, combine the vinegar, mustard, and garlic. Add the oil in a slow steady stream, whisking constantly. Season with salt and pepper to taste.

3 tablespoons balsamic vinegar
1 tablespoon Dijon mustard
1 garlic clove, minced
1/2 cup olive oil
Salt and freshly ground pepper
N/A freshly ground pepper

Steps:

  • Combine the olive oil, balsamic vinegar, honey, Dijon mustard, shallot, garlic, salt, and black pepper together in a glass jar with a lid. Replace lid on the jar and shake vigorously until thoroughly combined.

Steps:

  • In a medium bowl whisk together the vinegar, mustard, shallot, hot pepper sauce and salt. continue to whisk while adding the oil in a slow stream; the dressing will thicken. Add freshly ground pepper to taste, and adjust the seasoning. Use within an hour or so of completion.

Fig Balsamic Vinaigrette image

Steps:

  • Simmer Figs in water until very soft.
  • Puree with hand held wand.
  • Keep on low heat, and continue until it reaches a thick consistency.
  • Sweat shallots over medium low heat in olive oil, and cook until tender (about 15 minutes).
  • Add sugar and cook another 5 minutes.
  • Add to fig mix and puree again.
  • Add vinegar.
  • Bottle and refrigerate.

Steps:

  • Combine the mustard, salt, pepper, sugar and vinegar in a medium bowl; use a hand mixer or immersion stick blender to whip the mixture. With the mixer or blender running, add the oil in a slow steady stream (the stream should be no thicker than a pencil, he says) until that gorgeous consistency you're after is achieved. Va bene!
