"IT'S A KEEPER!" FISH STICK CASSEROLE

There are several versions of this recipe, this is how I make it. My nephews LOVE it! It tastes like cheesey fish sticks, potatoes and a slight taste of creamy tartar sauce all baked into one! :) **If you don't like tartar sauce, simply omit the sweet pickle relish. But we LOVE it just like this! :)

Steps:

  • In lg.
  • bowl, stir together all ingredients except for half of the cheese and the fish sticks.
  • Spread into 13x9 baking dish.
  • Top with frozen fish sticks in 3 rows of 6 longways.
  • Sprinkle evenly with the rest of the cheese, spreading, making sure some of it gets down in between and around fish sticks.
  • Bake at 350•, uncovered, for about 35-40 minutes.
  • Serve with coleslaw and garlic bread.

Steps:

  • Preheat the oven to 475°.
  • Cook the fish sticks on a baking sheet according to package directions.
  • In a small bowl, stir together the mayonnaise, hot sauce and lemon juice.
  • A few minutes before the fish sticks are done, toast the rolls in the oven.
  • Smear 1 side of each toasted roll with the spicy mayonnaise.
  • Add a layer of fish sticks and top with the lettuce and tomatoes.
  • Serve the sandwiches with lemon wedges and spicy mayonnaise on the side.

Steps:

  • Preheat oven to 400°F Mix soup, onion, chilies, sour cream, and 1/2 cup of cheese and spread 1 cup of mixture on bottom of large greased rectangular dish.
  • Place two frozen fish sticks in center of each tortilla, followed by 2 Tbsp of soup mixture. Place seam down into casserole dish.
  • Spread remaining sauce over enchiladas, bake 30 minutes, sprinkle with remaining cheese, bake 5-10 more minutes, let stand 5 minutes and serve immediately.

Bay-Scallop Po' Boy with Spicy Mayo image

Steps:

  • In a small bowl, combine mayonnaise, garlic, lemon juice, teaspoon paprika, and hot sauce; season with salt and pepper. Set spicy mayo aside.
  • In a medium bowl, combine breadcrumbs, flour, and remaining 1/2 teaspoon paprika; season with salt and pepper. Add scallops, and toss to coat.
  • In a medium nonstick skillet, heat oil over medium-high. Working in two batches, fry scallops, tossing occasionally, until golden and cooked through, 2 to 3 minutes. Using a slotted spoon, transfer scallops to a paper-towel-lined plate; season with salt.
  • Dividing evenly, spread inside of buns with spicy mayo. Top with a lettuce leaf, then scallops. Serve po boys immediately, with lemon wedges.
