BEST BAKED FRENCH FRIES
The healthiest way to make fries is to bake them. It saves money and you can't beat the taste. I have been playing around with different ways to bake fries for some time now, and I feel this is the best recipe thus far. Baking time may vary depending on how thick you cut the fries. Enjoy!

Steps:
- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil; spray with cooking spray.
- Place sliced potatoes in a colander; sprinkle sugar over potatoes. Set aside until liquid is released from potatoes, 20 to 30 minutes. Drain liquid and dry potatoes well.
- Mix potato slices, olive oil, garlic powder, salt, and black pepper in a resealable bag until evenly coated. Spread coated potato slices in a single layer, leaving space around each potato, on the prepared baking sheet.
- Bake in the preheated oven for 20 minutes; flip fries and continue baking until crisp and browned, about 20 more minutes.

BAKED LEMON FRIES

Steps:
- Preheat the oven to 450 degrees F.
- Peel potatoes and cut into 3/8-inch thick slices (lengthwise) cut again into 3/8-inch thick fries.
- Place the potatoes into a bowl with cold water. Just before cooking, drain water and place potatoes on paper towel, pat dry completely. Put in a bowl; add olive oil, salt & pepper. Toss well and lay out in 1 layer on nonstick baking sheets.
- Bake until light brown, approximately 30 to 40 minutes, turning frequently until golden brown.
- Remove from oven. Add lemon zest, parsley, garlic & more salt and pepper if desired. Toss well and serve.

BAKED PARMESAN CARROT FRIES WITH LEMON-BASIL AIOLI
Steps:
- For the aioli: Combine the mayonnaise, basil, lemon zest and juice and garlic in a blender and blend until almost smooth. Season with salt. Transfer to a bowl and refrigerate until ready to serve.
- For the carrot fries: Preheat the oven to 425 degrees F. Fit a large baking pan with a wire rack and spray the rack with cooking spray.
- Mix together the panko, Parmesan, parsley, cayenne and 1/2 teaspoon salt in a wide shallow bowl. Whisk the milk and eggs together in another shallow bowl.
- Toss the carrots with the flour. Working with a few carrots at a time, shake off the excess flour, then dip them in the egg. Let the excess egg drip off, then toss them in the panko mixture, patting them so the crumbs adhere. Arrange them on the wire rack in a single layer.
- Spray the coated carrots thoroughly with cooking spray, then bake until golden brown and crisp-tender, 10 to 15 minutes.
- Serve the carrot fries with the aioli for dipping.
BAKED GREEK FRIES
I like these summery potato wedges with Greek flavor as a side dish for grilled lamb or kofta.

- Preheat oven to 400 degrees F (200 degrees C).
- Spread potatoes on a baking sheet; drizzle with olive oil and stir potatoes to coat. Stir Greek seasoning, lemon zest, salt, and pepper together in a small bowl; sprinkle seasoning mixture evenly over potatoes.
- Bake in the preheated oven until tender when pierced with a fork, about 20 minutes.
- Crumble feta cheese over potatoes; sprinkle with mint.

- Preheat the oven to 425 degrees Fahrenheit. Evenly space the oven racks to ensure even cooking.
- (Watch this video or use a fry cutter.) Wash the potatoes, leaving the skins on. Slice off the ends of each potato, then slice off part of the side to make a base. Place the potato half cut side down and cut off a 3/8-inch slice, then lay the slice on its side and cut it into several long strips. Repeat until all potatoes have been cut into fries. The pieces can be uneven, but aim for as uniform of thickness as possible. See the video for full instructions!
- Place the cut fries into a medium bowl and rinse with cold water until water is clear. Then fill the bowl with cold water and allow to rest for 10 minutes (while the oven preheats). Then drain the potatoes and dry them thoroughly with a clean dish towel.
- Add the fries to a dry bowl and toss them with the olive oil, smoked paprika, garlic powder, Old Bay, black pepper, and kosher salt. Line two baking sheets with parchment paper. Spread the fries in straight lines on the paper, placing them as far apart as possible.

- Preheat your oven to 400 degrees. Slice your potatoes into thin, evenly cut strips. Season generously with lemon pepper, salt, and two thirds of the oil.
- Arrange fries directly on a sheet pan and bake for 20 minutes. Pull out of the oven and toss with a spatula, making sure each fry flips. (IF THE FRIES ARE NOT MOVING WITHOUT BREAKING, THEY AREN'T READY YET. Throw back in the oven and check again until every 2 minutes they are ready to flip.)
- Drizzle with remaining oil and bake for another 10 minutes. Season with additional salt if necessary.
