FLUFFY FLAPJACK PANCAKES
These are quick, easy, and yummy pancakes. They are flexible, too, according to your dietary needs. I have tried many recipes, and this one is simple and fail-proof! Fluffy flapjacks every time. Caution: very filling.

- Whisk flour, sugar, baking powder, baking soda, and salt together in a bowl until no lumps remain. Add milk, eggs, and oil; whisk until batter is runny and well mixed.
- Heat a nonstick griddle over medium heat and lightly spray with cooking spray. Pour in a portion of the batter. Cook until bubbles form, 3 to 4 minutes. Turn and cook, pressing middle gently with the spatula, until lightly browned on the other side, 2 to 3 minutes more. Repeat with the remaining batter.

- Sift flour, baking powder, baking soda, and salt together in a bowl. Stir in milk and condensed milk until smooth.
- Spoon batter into the hot oil and deep-fry until golden brown, 3 to 5 minutes.

This recipe is from Women's Weekly cookbook from the early 80's. It is a great recipe for using up leftover roast meat or ham. A simple but hearty dish. We usually serve with bbq sauce

Steps:
- Mix flour, eggs and milk ensuring no lumps.
- Chop meat into 1/2 inch cubes (this can be very roughly done - no need to be neat or accurate).
- Add meat to batter.
- Pour pancake size amounts of batter into a non stick frypan - cook as you would a pancake.

FRITTER BATTER
Steps:
- Combine yolks with oil and beer. Gradually stir this into flour (it should be thick enough to stick to the food) and beat until very smooth with a few swift strokes. Rest batter, covered, in refrigerator for 3 hours at least so it ferments a bit. Get oil to right temperature. Beat egg whites until stiff and fold into batter. Dip the onions or mushrooms in the batter and fry.
