FLUFFY APPLE MOUSSE
One blogger's apple crepe filling gone wrong and a wonderful discovery is made. An amazing alternative to the ubiquitous chocolate mousse! The recipe calls for 6 egg yolks but no egg whites. I hate freezing egg whites, they always get lost in my TARDIS of a freezer, so I make a Pavlova with the whites and use the mouse as a filling. Good, huh? Pardon me while I pat myself on the back for my ingenuity....

Steps:
- To make the mousse:.
- In a double boiler, beat the eggs with the sugar, apple and lemon juice with a wire whisk. You should get a foamy mixture.
- Don't think you can do this in the microwave or on a pot straight over a flame. Trust me, use a double boiler, or in my case, a Pyrex bowl over a pot of simmering water. Okay, double boiler rant over.
- Keep whisking while it cooks, to keep it foamy until it gains volume up, doubles in size and is thick enough to coat a spoon. Chill.
- In a separate bowl, whip the cream and when the sauce is cold, gently fold it inches
- To make the caramalized apple:.
- Dice the apple and add it to the sugar and butter in a frying pan, over medium heat. Remove it when it starts to golden.
- Putting it all together:.
- Pour into the serving cups, over fresh diced apple or caramelized apple, if you've got a sweet tooth.
- Alternatively, use it (with the caramalized apple) as a wonderful filling for Pavlova.

FLUFFY COFFEE MOUSSE
Creamy and fluffy all at once, this dessert looks good enough to be nice ending to a romantic dinner- but it only takes a few ingredients and little effort to make. Taken from an old 70's dessert cookbook. Cooking time is chilling time.

Steps:
- Heat the coffee and marshmallows in a small saucepan, stirring often until they are almost melted.
- Meanwhile, prepare an ice bath.
- Add the chocolate to the marshmallow mixture, remove from heat and keep stirring until it's smooth. Pour into a bowl and place on ice bath.
- Stir until cooled and beat with an electric mixer until frothy. In another bowl, (no need to wash beaters) beat evaporated milk until thickened and doubled in volume. Fold gently into marshmallow mixture.
- Divide into 6 custard or ice cream cups and refrigerate until set. Garnish with a dollop of whipped cream and more grated chocolate if desired.

- In a bowl, cream sugar and butter. Add eggs, one at a time, beating well after each addition. Combine dry ingredients; add to the creamed mixture alternately with applesauce. Mix just until combined. Fill greased or paper-lined muffin cups two-thirds full. Bake at 350° for 20-25 minutes. Cool on a wire rack.

- Make the apple compote: Peel your apple and cut into about 10-12 equal pieces. Add to a small saucepan along with the 1/4 cup sugar, 100 ml water, and lemon juice. Stir together. Simmer until the apple is easily pierced with a fork, but not yet falling apart.
- Puree the apple compote until smooth. Prep the gelatin by sprinkling it over the cold water. Set aside and allow to bloom. When fully bloomed, microwave for about ten seconds until melted.
- Add the pureed apples to a medium sized mixing bowl. Add the apple juice, the 2 tablespoons of sugar, Greek yogurt, and melted gelatin and whisk to combine. Set aside, or place in fridge.
