FLUFFY MINT DESSERT

- Reserve 1/4 cup of crushed cookies for garnish; set aside. Combine the remaining cookies with butter; press into an ungreased 13-in. x 9-in. dish. , Fold together the whipped topping, marshmallows and mints; pour over crust. Garnish with reserved cookies. Cover and refrigerate for 1-2 days before serving.

- 1. in a Zip lock bag, Crush Chicolate cookies. reserve 1/4 cup for garnish.
- 2. Mix the remaining crushed cookies, with the melted butter; Press into ungreased 13 X 9 X 2 baking dish.
- 3. FOLD together whipped topping, Marshmallows, & mints; Pour over the Crust.
- 4. Sprinkle with the reserved Cookie crumbs. Cover and Chill in Refer for 1-2 days before serving. Serves 18-20 1/2 Cup servings.

- 1. STEP ONE: Preheat Oven @ 350 degrees Step one Ingredients; Mix in Medium Bowl. Set aside 1 cup The remaining Mixture Press in 9 X 13 baking dish. Bake for 5 Minutes.
- 2. Step Two: Whip cream in a small bowl until stiff. Fold in Vanilla. Spread over the Crumb Mixture above.
- 3. Step 3: Sprinkle Mini Marshmallows over step 2, Whipped Cream.
- 4. Step 4: Cover Step 3 (Mini Marshmallows) with Pie Filling. Sprinkle reserved Cup of Crumb Mixture over Pie Filling. Press down Lightly. Chill several Hrs or Over Night. Serves 8-10 in 9 x 13 dish. Kitchen Helper tip: you can use any of your Favorite Pie Fillings; Raspberry, Blueberry, Etc. instead of Cherry.

CREPES FOR VALENTINE'S DAY BY FREDA
Fruity, fresh, fluffy, light, delicate ... I could go on and on. The Kitchen Crew tried them with whipped cream and vanilla yogurt - we liked both. Before we knew it we had eaten everything! Perfect for a brunch, luncheon, special occasion dinner, breakfast, dessert ... these are just yummy!

- 1. Combine "CREPE Mix Ingredients" and set aside overnight in the fridge. Not less than 4 Hrs.
- 2. To Cook Crepes: Season a small egg pan or skillet with melted butter.
- 3. Pour 1/4 cup MIX (use a measuring cup) into medium-high heated skillet/pan. Cook until brown on both sides.
- 4. As they cook, place on a platter and separate with wax paper until ready to fill them. Keep warm.
- 5. To Fill Crepes: Heat filling to hot, add warm filling and roll in jelly roll style. Place on your serving plate.
- 6. Top with sprinkled powder sugar (dust well), whip cream, or your choice of toppings above.
- 7. SO EASY to make, SO GOOD, and very pretty on a platter, your family will think you're "SPECIAL" TOO!
MINT SURPRISE COOKIES
This cookie is a Christmas tradition started by my grandmother. She used to always mail them along with her "Minnesota Bars" (#162331). I have a note on the recipe card that it was originally a winner in Pillsbury's 1st Grand National by Miss Laura Rott of Naperville, Illinois. (One bite and you'll know why it won.) The original recipe called for one package of Rockwood Chocolate Mint Wafers. I've never been able to find them in the store so I use Andes Mint Baking Pieces. I'm sure you could also melt regular chocolate chips and add a little mint flavoring as well. I posted the "refrigerator cookie" method because I think it's easier. You can also chill dough for just two hours, then enclose chocolate in 1 tbsp. of dough. Bake according to directions. COOKING TIME INCLUDES FOUR HOURS OF CHILLING.

- Sift flour, soda, and salt.
- Cream butter and sugar well.
- Add eggs, water, and vanilla.
- Blend in dry ingredients gradually; mix thoroughly.
- Shape dough into rolls 1 1/2 inches in diameter. Wrap in wax paper. Chill at least four hours.
- Meanwhile, melt chocolate and cut into small, round wafers (the shape isn't so important -- just enough to fill the center of the cookie).
- Cut dough in slices 1/8" thick. Place on cookie sheet. Top one slice of dough with chocolate wafer. Cover with second slice and seal edges.
- Top with walnut half.
- Bake at 375 for 10-12 minutes.
FLUFFY MINT DESSERT
My niece made this for a gathering I attended and I loved it. It is a very light, creamy dessert. It does need to made at least a day ahead of time so allow for that in your preparation. (The mints called for are sold under the name of "Melt Away Mints" at Hickory Farms but you can get them other places as well. There is a photo of them in the photo section of this recipe.)

- 2. Whip cream, then Add to Marshmallow Mixture, with the Pineapple and nuts. Chill Several Hrs. (4 hrs at least) Serve in Dessert Dishes. (OPTIONAL) Top with a Marashino Cherry with a stem, and a Sprinkle of Chopped Nuts.

- Preheat oven to 350° F. Butter the bottom and sides of a 9″ x 13″ pan. Line bottom of pan with parchment paper, and then butter the parchment paper. Add a bit of flour to coat the entire inside surface of the pan, tap out the excess, and set pan aside. This will allow you to turn the cake out onto a platter. If you want to leave the cake in the pan, skip the parchment paper and follow the rest of the steps.
- In the bowl of a stand mixer fitted with a paddle attachment, add flour, sugar, cocoa powder, baking powder, baking soda, espresso powder, and salt. Mix on low speed to combine dry ingredients well.
- Add buttermilk, vegetable oil, eggs, and vanilla to dry mixture and mix together on medium speed until well combined. Reduce speed to low and carefully add hot coffee to the cake batter. Once the coffee is incorporated, scrape the bottom of the bowl with a rubber spatula and then turn mixer speed to high and beat for 1 minute.
- Pour cake batter into the prepared pan. Bake for about 40 minutes, until the center is mounded and firmed up, and a toothpick inserted in the center comes out clean. Remove cake from oven and let cool for about 15 minutes. Place serving platter upside down on top of cake pan, and invert cake onto it. Let cake cool completely before spreading the top with the fluffy mint chocolate chip buttercream.
