SIMPLE FOAM DESSERT SAUCE
I was looking for a quick way to dress up a package of store-bought pudding tonight, and came up with this. It is important to use a small pan for this recipe. You can make sure that the pan you have is the right size by squeezing the marshmallows all together into the bottom of the pan, so that there are no double layers of marshmallows.

Steps:
- Place water, marshmallows, and vanilla extract in a SMALL saucepan on very low heat.
- Add milk until the milk level in the saucepan is as high as the tips of the marshmallow mixture. (the marshmallows should be squished together in one layer on the bottom of the pan. If you end up with two layers, your pan is not the right size.).
- Stir until the marshmallows are completely melted, and the resulting sauce is light and foamy.

DESSERT SAUCE FOR FRUIT
Here is a simple recipe that is a little out of the mainstream. (at least for me!) It is a great topping to go with any fruit but especially great with strawberries. Use it with fruit on pound cake or on top of ice cream. It's not mine per se but I'm glad to share it with you. The pepper adds just a little "kick" to it. It is a mellow sweet taste that I have given to the most discriminating taste buds and got their compliments

- Heat the butter and oil in a small pan over a medium heat until the butter starts to foam. Fry the shallot until soft but not golden, about 8 mins.
- Add the bay leaf and garlic, then cook for 1 min more. Add 100ml whisky and simmer until absorbed by the shallots, and almost evaporated.
- Pour in the stock and simmer for 5-10 mins until reduced by half. Stir in the cream and simmer for another 5 mins until thickened slightly. Season with salt and taste the sauce. Stir in the remaining whisky for a stronger flavour. Serve with haggis, steak or mashed potatoes.
