This four cheese sauce is great with gnocchi, fettuccini, or your choice of pasta. Garlicky French bread would be a tasty accompaniment.

Steps:
- In a medium saucepan combine whipping cream and butter. Bring to a simmer over medium heat, stirring frequently until butter melts. Gradually stir in grated Parmesan cheese, grated mozzarella cheese, grated provolone cheese, and grated Romano cheese. Reduce heat to low, and continue to stir just until all cheese is melted.
- Serve immediately, sauce will thicken upon standing.

- 1. In a large pot of boiling salted water, add 1 pound tortellini pasta and cook as the label directs, stirring occasionally.
- 2. Melt butter over medium heat; whisk in cream and nutmeg. Bring to a simmer. Add cooked, drained pasta and toss, adding up to 1/2 cup pasta water if needed.
- 3. Stir in the four cheeses and add baby spinach. Stir until spinach is wilted. Season with salt and pepper to taste.

- On medium low, heat the butter in a pot.
- Add the garlic and pepper. Cook until garlic is golden brown.
- Reduce the heat to low.
- Slowly add the cream, stirring continuously until all the cream is in the pot.
- Simmer the cream for five minutes. Then stir in the parmesan, asiago, romano and the spices.
- Add the mozzarella and stir until smooth. Simmer for five more minutes then turn off the heat. serve as soon as possible.

- Heat oven to 400°F.
- Bring milk and Alfredo sauce just to boil in large saucepan on medium heat, stirring occasionally. Meanwhile, mix Parmesan, parsley and garlic powder until blended.
- Separate fettuccine noodles. Add to sauce; stir to evenly coat. Transfer to 13x9-inch baking dish sprayed with cooking spray; top with chicken, Parmesan mixture and mozzarella.
- Bake 30 min. or until chicken is done (165ºF).

- In a large saucepan, heat butter over medium heat. Add shallots; cook and stir until tender, 2-3 minutes. Add garlic; cook 1 minute longer. Add cream; cook and stir until heated through. Stir in Asiago, 1/2 cup Parmesan, Romano cheese, salt and pepper; bring to a boil, stirring constantly. Reduce heat; simmer, uncovered, until thickened, about 10 minutes, whisking occasionally., Meanwhile, cook pasta according to package directions. This came from a good deal of experimenting until I got everything just right. It's a combination of a recipe my girlfriend created mixed with several recipes I've seen around the internet, refined until I found just the right taste.

- In a small saucepan, heat the heavy cream, butter, and cream cheese over medium heat, stirring regularly.
- When the butter and cream cheese have melted, add the Parmesan, mozzarella, and Romano cheeses. As the cheeses melts, bring the mixture to a boil, stirring continuously.
- When all the cheeses have melted, add the Italian spice mix, garlic, and salt. Gradually turn the heat down while continuing to stir frequently.
- Preheat your oven to 375 degrees Fahrenheit. Place the chicken breast on a baking sheet.
- Season the chicken with the Italian seasoning and garlic.
- Bake the chicken for 10-20 minutes. Chop the chicken into bite-sized portions.
- Boil the egg noodles until soft. Strain.
- Place the noodles on a plate. Add the chicken. Pour the Alfredo sauce over the top. Enjoy.
