FOUR SEASONS ENCHILADAS
Here's a simple enchilada recipe that doesn't use a tomato based or standard enchilada sauce. It's quick to throw together and can easily be adjusted for smaller portions.

Steps:
- 1. Preheat oven to 350ºF.
- 2. Lightly grease a 9x13 inch baking dish.
- 3. In a medium bowl, mix chile peppers and cream cheese.
- 4. Stir in chopped chicken or turkey.
- 5. Place the tortillas in a microwave oven.
- 6. Heat for 1 minute, or until the tortillas are softened.
- 7. Spread about 2 heaping tablespoons of the chile pepper mixture on each tortilla, and roll up.
- 8. Place the rolled tortillas, seam-side down, in single layer in the prepared baking dish.
- 9. In a medium bowl, combine the salsa and beans.
- 10. Spoon the mixture over the enchiladas.
- 11. Sprinkle the top with cheese.
- 12. Bake 20 minutes or til bubbly and lightly browned.
SIMPLE PERFECT ENCHILADAS

- In a saucepan over medium-low heat, combine the canola oil and flour. Whisk together and allow to bubble for 1 minute. Pour in the red sauce, chicken broth, salt and pepper. Bring to a boil. Reduce the heat and simmer while you prepare the other ingredients.
- While the sauce is simmering, brown the ground beef with the onions in a large skillet over medium-high heat. Drain the fat, add the salt and stir to combine. Turn off the heat and set aside.
- In a small skillet over medium heat, heat some canola oil. Lightly fry the tortillas just until soft. Do not crisp. Drain on a paper towel-lined plate. Repeat until all the tortillas have been fried.
- Preheat the oven to 350 degrees F.
- Spread 1/2 cup of the sauce in the bottom of a 9- by 13-inch baking dish. Next, one at a time, dip each tortilla into the sauce. Set the sauce-soaked tortilla on a plate. Place on some of the meat mixture, chilies, green onions and black olives. Top with a generous portion of grated Cheddar. Roll up the tortilla to contain the filling inside.
- Place the tortilla seam side down in the baking dish. Repeat with the rest of the tortillas and pour the remaining sauce over the top. End with a generous sprinkling of cheese and any other bits of chiles, green onions or olives you have left over from the filling.
- Bake the enchiladas for 20 minutes, or until bubbly. Sprinkle chopped cilantro over the top and serve.
GROUND TURKEY ENCHILADA STEW WITH QUINOA
Ground turkey enchilada stew with quinoa. Stir in lime juice before serving.

- Heat a large skillet over medium-high heat. Cook and stir turkey in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Combine browned turkey, enchilada sauce, black beans, quinoa, diced tomatoes and chiles, water, corn, salsa, onion, green bell pepper, chili powder, garlic, and cumin in a slow cooker.
- Cook in the slow cooker on High until quinoa is tender and flavors are blended, about 4 hours. Stir in Cheddar cheese and cilantro.

FOUR BEAN ENCHILADAS

Steps:
- Stack tortillas and wrap tightly in foil; bake in a 350 degree oven for 10 minutes.
- Combine beans, cheese soup, taco seasoning mix, cumin, and pepper in a saucepan; cook over medium-high heat until heated through.
- Spoon about 1/3 cup filling onto one end of each tortilla.
- Starting at the end with the filling, roll up each tortilla.
- Arrange tortillas, seam side down, in two 2-quart rectangular baking dishes.
- In bowl, stir together enchilada sauce and tomato sauce; pour over tortillas.
- Cover with foil; bake at 350 degrees for 30 minutes or until heated through.
- Remove foil; sprinkle with cheese; bake uncovered about 15 minutes or until cheese melts.
- If desired, sprinkle with olives and green onions.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
- Cook and stir ground beef and onion in a skillet until beef is browned and crumbly, 5 to 7 minutes. Drain off grease. Stir 1 cup Cheddar cheese, sour cream, taco seasoning, and pepper into the beef mixture until cheese is melted. Mix in red enchilada sauce, chili powder, and salt.
- Warm tortillas in the microwave for about 1 minute. Spoon about 1/4 cup of the beef mixture into the center of each tortilla. Roll tortillas up and place in the casserole dish, seam-side down. - Cook the ground beef in a large saute pan over medium-high heat until it is browned and completely cooked through, using a spatula to break up the beef into small pieces as it cooks. Using a slotted spoon, transfer the beef to a separate bowl and set aside. Reserve 1 tablespoon of the remaining grease, and discard the rest.
- Add the onion to saute pan and cook for 5 minutes (in the reserved 1 tablespoon of grease) until is is soft and translucent. Stir in the green chiles and beans, and cook for 1 minute to warm, stirring occasionally. Remove pan from heat, and stir the ground beef and 1/4 cup enchilada sauce into the onion mixture until combined. Set aside.
- To assemble the enchiladas, set up an assembly line including: tortillas, enchilada sauce, ground beef mixture, and cheese. Lay out a tortilla, and spread two tablespoons of sauce over the surface of the tortilla. Portion about 1/8th of the ground beef mixture and spread it in a line down the center of the tortilla, then sprinkle with 1/3 cup cheese. Roll up tortilla and place in the prepared baking dish. Repeat with the remaining ingredients. Spread any of the remaining enchilada sauce on top of the tortillas, then sprinkle the remaining shredded cheese on top.
