GREEN SALAD WITH THE ULTIMATE FRENCH VINAIGRETTE

Green Salad with the Ultimate French Vinaigrette image

Steps:

  • In a two-cup glass measure, whisk together the vinegar, mustard, garlic, salt, and pepper. Slowly add the olive oil and continue whisking until the vinaigrette is emulsified. Toss the greens with enough dressing to moisten and serve.

3 tablespoons Champagne or white wine vinegar
1/2 teaspoon Dijon mustard
1/2 teaspoon minced fresh garlic
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 cup good olive oil
Salad greens or mesclun mix for 6 to 8 people

French Vegetable Salad image

Steps:

  • cook and drain and rinse veggies -- set aside.
  • Peel and core apple and dice into small bits.set aside.
  • Dice dill pickles small.
  • In a bowl add all of the above and stir gently.
  • Add sour cream and Mayo and sugar -- stir gently to marry all the flavors -- chill or serve immediately.

  • Quick Pickled Eschalots: Stir sugar in vinegar until dissolved. Stir in eschalots, then leave for 30 minutes until it becomes floppy and turns pink. Drain.
  • Assemble: Pile lettuce on a platter (flatter better than deep bowl). Drizzle with about 1/2 the Dressing then toss gently with your hands. Scatter over fresh herbs, pickled eschalots and walnuts. Drizzle lightly with more Dressing. Serve immediately!
